Chicken Cordon Bleu II

I love this recipe, we double the sauce amount of wine, chicken bouillon seasoning and heavy whipping cream and make enough sauce to put over angel hair pasta with the chicken. Makes for a great whole meal!

Apricot Cream Cheese Thumbprints

I made these and drizzled them with a light frosting of milk/almond extract and confectioners sugar. Made them two days in a row by the dozens of dozens and people at work couldn't get enough of them. I was called evil for bringing something so delicious in to work that the girls starting their new years diets couldn't resist them!! Only thing I changed was to add a little vanilla extract and 1/2 teaspoon lemon extract instead of the zest. Then I rolled them in confectioners sugar to keep them from sticking. No need to add extra flour they turn out way better and lighter if you don't.

Peanut Butter Cup Cookies

Made these and rolled them into balls, baked them for 8 minutes, took them out and pressed the peanut butter cups in and baked them for 2 more minutes. People at work couldn't get enough of them. I was called evil repeatedly for bringing something so sinfully good in when a lot of people were starting their new years diets!! Don't over add the flour though or they will fall apart. I rolled them into balls in confectioners sugar to keep them from sticking and set them right on the pan...easy peasy and so good!!

Chicken and Bok Choy Soup

I had some smaller heads of Pak Choi growing in a raised bed that was free but I had no idea what to do with it. I substituted 3 small heads of that, used 4 large Idaho potatoes cubed, about 5 chives diced and the onion bulbs from the chives as a substitute for the full sized onion. The rest I did double but the same for carrots/celery/garlic and chicken. Boy did it turn out delicious and since most of the stuff was growing in my garden cheap! My boyfriend gave it a rave review as well.

I used regular pizza crust and added 1/4 cup of sour cream to the cream cheese and it was so good I couldn't stop grabbing another piece every time I passed the fridge.

Banana Sour Cream Bread
