I am happily married. I have a great dane that is 5 yrs old. I used to enjoy spending most of my time in the kitchen testing out new recipes or making up my own, then I got an embroidery machine and tend to neglect the kitchen.

My favorite family cooking traditions
My family doesn't really have a cooking tradition. My mom doesn't do much home cooking unless it comes out of a box fully/partially prepared and my dad does do a little cooking when he is home. So I took it upon myself to learn to cook - trial and error is my method of cooking. If it doesn't turn out good the first time, give it another shot (substitute some ingredients) if it still doesn't work out then just find a new recipe.

Tacos De Matamoros
I was quite pleased with this recipe. I didn't read the directions before starting and just assumed I should brown the beef. So I browned & drained the beef, then added the seasonings, peppers, onions and water. Simmered for 30 minutes. I did end up adding a little more of the seasonings due to it being a little bland for my tastes. I will use this recipe again, maybe next time I can follow the directions.

Creamy Beef Enchiladas
This recipe is a keeper! My husband and I enjoyed it. I cut the recipe in half as there is just 2 of us and omitted the black olives. I used a homemade enchilada sauce recipe, but I also think the a mixture of the cream cheese and salsa would be great as a top sauce! I have never cooked with corn tortillas and they seemed to tear easily, so I heated them up using a little cooking spray in a skillet for 15-30 seconds. A little more prep, but it helped the tortilla to be more flexible! Thank you for sharing!

Fish Friday Tuna Burgers
I thought this recipe was pretty good. My husband said he preferred salmon patties, but I think it's a good recipe to change things up on my menu! I would make this recipe again. I forgot to add the slices of bread, but I really don't think that it made much of a difference. We also didn't eat it as a "burger", just as patties.
