Layered Salad

I loved the ingredients in this salad and it is rather easy to prepare, especially since you can prepare it the day beforehand. I brought it to a potluck and was asked several times for the recipe!!

Neiman Marcus Cake I

I made this cake for my husband's birthday 4 months ago and he took it with him to work. His coworkers have said recently that they still think about this cake and that it's the best cake ever! My husband has requested it several times since his birthday. Very rich and very good!

Bacon and Tomato Cups

I have made this recipe several times for different events, and without fail I get asked for the recipe and get numerous comments on how good it is. It's easy to make and yummy to eat!

Peanut Soup

I think this recipe is great. I use real butter instead of margarine, although I might use the suggestion of olive oil next time, and crunchy peanut butter. I have also used half & half. I've made this for family and they loved it, and my husband has requested it a couple of times. Good winter soup.

Radish Dip

Have mixed reviews about this recipe, it was way too runny and garlicky for my tastes, even though I love garlic. I even added extra radishes and sour cream to try to balance out the flavors. Some people liked it, but I probably won't make it again.

Fresh Pineapple Upside Down Cake

I've had very good results with this recipe, and it's definitely better than some other pineapple cakes I've tried. My only complaint is having to whip the egg whites separately, and for some reason, finding unsweetened pineapple juice that isn't in a huge jug is difficult!

Erin's Indonesian Chicken

This was really good, my husband isn't a big chicken or rice fan so I'm always trying to find new ways to make these ingredients as I love both of them. The husband gave his seal of approval and said I could make this again. I loved the peanut flavor in the sauce. I might omit the green beans next time, or put them on the side.

Fluffy Peanut Butter Pie

This was good, but possibly too sweet. I don't mind sweet recipes but I think the sweetened condensed milk made it a bit overboard. My guests liked it, but I also cut large pieces of the pie, which could have been a problem. I am not too sure about the lemon juice in the recipe. I did really enjoy the crust, but might not make this again.

Dog Treats I

I thought these were very easy to make and most of the ingredients I had on hand. I made them for my beagle's 1st birthday and she seems to enjoy them, as does my other dog. Will make them again for her 1st birthday in a couple of months. They hardened up really well and I also used a "bone" cookie cutter

Fabulous Fudge Chocolate Cake

I used this to make a cake for a bridal shower recently, and everyone loved it! I also increased the amount of chocolate as others suggested. I didn't make the carmel sauce- I used buttercream frosting, but the cake itself was great. As a result of making this cake, I still have people asking me if I have baked lately. I wonder if that's a hint???

Sophie's Zucchini Bread

I too made most of the suggested changes, 1/2 applesauce for the oil, 1 cp of whole wheat, 1 cp brown sugar, and I used Splenda instead of white sugar. I also added carrots to the first batch I made, and choc chips to the second. The second batch I cut down on the brown sugar by 1/2 a cup and the cinnamon by 1 tsp. It was not as good, I definitely recommend using all of the cinnamon. I'm still rating it as a 5 because I think the base for the recipe is great!

Chocolate Cornstarch Pudding

This was pretty good. I had some young guests over and they enjoyed the pudding made into a popsicle-- but it was not good two days later. Pretty gross actually. I don't know what happened with that, but I may still use this as a pudding recipe.

Slow Cooker Italian Beef for Sandwiches

I thought this was pretty good, my husband wanted a second sandwich the next day which is always a good sign as he's not a huge leftovers fan. I made changes as others suggested (beef broth, no extra salt, onion powder instead of salt). My dislike of the recipe is in using the salad packets, there is so much sodium in them and I'd like to find a recipe that uses just the spices, not something pre-packaged so I can better control the salt. However it was pretty tasty meat! Updated: I have since made this multiple times since my husband likes it so much, and it is very good and very easy (guess I'm over the salad packet sodium level for this recipe). We always get several meals out of this so I love that as well!

Zucchini Brownies

I thought this recipe was very good, the people I served it too all loved it. I too was a bit afraid while mixing the batter, but it does turn out very moist because of the water in the zucchini. I substituted applesauce for the oil, did 1/2 wheat flour and 1/2 regular. I also did 1/2 splenda and 1/2 regular sugar. Great way to get a chocolate fix and use up zucchini at the same time!

Chocolate Peanut Butter Pie

This was very good, my husband raved over it and said it was "spectacular" and "better than restaurant pie". I am giving it 4 stars because I also reduced the amount of sugar to 2 cups and the milk to 1.5 to help it setup. I also used fresh whipped cream. For the second pie, I used mini graham cracker pies that were very cute!

Old Fashioned Coconut Cream Pie

This was very well received. It was somewhat overshadowed by the chocolate and peanut butter pie I also made for the event I took it to, but it was well liked (I didn't try it as I don't like coconut). I substituted 1.5 cups of coconut milk and cornstarch as suggested and used fresh whipped cream. It does take quite a long time to boil at a low flame, but I think it's worth it.

Alison's Slow Cooker Vegetable Beef Soup

I thought this was ok. I changed it by using 2 cups of beef broth and 1.5 tsp of salt. I just couldn't see using so many bouillon cubes, and I usually just use broth anyway. The veggies were a little mushy after cooking for 8 hours, and I just didn't love the flavor over all. I think in the future, I will use fresh vegetables and maybe omit the tomatoes. But won't use this recipe again.
