Cuban Beef Stew

This was ok. Neither my husband or I thought it was great, just ok. I don't know if I will make it again - I have other stew recipes that I like much better.

Libby's® Pumpkin Roll with Cream Cheese Filling

Thought this was good - it was well received by my guests and my husband has enjoyed it as well. It was pretty easy to make. I thought pecans would be a better fit than walnuts, so I used those and I also added some spice to the cream cheese filling. Will very likely make this again!

Brown Sugar Meatloaf

I loved this recipe, I hadn't made meatloaf in a long time, but I think I'll make it more often with this recipe. The only change I made was to use bread crumbs instead of saltine crackers, which I don't usually purchase. I also made it in a mini-loaf pan. Yummy!

Apple Cider Biscuits

The Best Chicken Fried Steak

This was good - not sure how often I will make it with the deep-fried aspect, but it was the closest I've gotten to restaurant style chicken fried steak. Will definitely keep in my recipe box!

Baked Garlic Parmesan Chicken

I really liked this- was hopeful my husband would as well but he was pretty neutral. Regardless, I'll likely make again. The one change I did was to heat the oil and garlic together, so that the garlic was infused into the oil. I also used Panko crumbs. I look forward to enjoying the leftovers for lunch.

Lavender Shortbread Cookies

3 stars for idea, I had looked forward to make this for a long time as I have a lavender bush in my herb garden. However, I used the base recipe for Rosemary shortbread, divided it in half and did half rosemary, half with 1 tbsp lavendar, 1/2 tbsp mint, and 1/2 tsp lemon. I didn't measure the lemon, but I know it was less than a 1/2 and I thought it was too strong. Will likely try it again without the lemon.

Rosemary Shortbread Cookies

Very good! I thought this was a good standard recipe for shortbread and allows for lots of variation with different flavors. I actually used this as a base and did half with rosemary, half with lavendar/mint (instead of using that recipes amounts). I think almond shortbread is still my favorite flavor though.

Quinoa Side Dish

Loved it! Eating leftovers as I type this. I have been looking to try this for a long time and was finally able to last night. I didn't have vegetable broth, but used chicken instead. I was happy that my husband liked it because I struggle with finding side dishes for him other than pasta - he isn't a rice fan.

Calabacitas

This was good, I have a vegetable garden for the first time this year and enjoy using zucchinis from it. I used chicken broth as opposed to cream, that was what I had on hand and also omitted the butter. I also didn't have Jack cheese, so used a grated cheese mix I always have. It was good, will likely make it again but might also try other Calabacitas recipes on the site.

Buffalo Chicken Burgers with Blue Cheese Dressing

This was ok - I don't see the flavor as bold, as the recipe claimed. Glad I tried it out first before making it for my husband. Really liked the idea, but it was just so-so in my opinion.

Beer Lime Grilled Chicken

This was pretty good, chicken was moist. I wasn't wowed by the flavor, however I think I will try it again with a couple changes. One, smaller pieces of chicken and two, actually grilling it on a grill. I used a grill pan, and am not sure this made a huge change. I hope the flavor will be better next time.

S'mores Crumb Bars

Yummy. S'mores is one of my favorite things in the world. I would concur with some of the other reviews that the bottom layer is very thin- I might try adding another cup or so of crumbs next time to make it thicker. I think having enough to sprinkle some over the top is important. I will definitely be making this again - perhaps with milk or dark chocolate. I'm taking these camping this weekend and looking forward to enjoying them in the beautiful Colorado mountains!

Chocolate Marshmallow Frosting

Loved this! I went a little overboard this weekend and made two birthday cakes for my mother-in-law, using this frosting for a chocolate cake. I have been wanting to try a marshmallow frosting for a long time! It was very yummy. I only used 1/2 cup of sugar, but the full 1/4 cup of cream. I had "plain" shortening as opposed to butter flavored, but it still tasted great. Will definitely be making again.

Fresh Strawberry Upside Down Cake

I'm averaging the score to 4 stars based on my thoughts and those I served it to. I really liked the idea as a way to use fresh strawberries and have been wanting to try jello in a cake for awhile. However, I just didn't care for the taste/texture. My husband and in-laws both liked it though, hence the 4 stars. The reviewer who recommended macerating the strawberries so that the gelatin woud dissolve had a great idea. My only other point is to recommend that the cake cool for at least 10 minutes before flipping it onto a serving tray.

Chocolate Chip Coffee Cake

Very good! I brought it into work and it was well received. Not all of the cinnamon/sugar mixture baked in on the top so I will probably swirl that in next time. Also the top caved in for some reason. But will add it to my list of coffee cake recipes that I like!

Round Steak Sauerbraten

Didn't really care for this at all. As my husband said "you make other dishes similar to this that are much better". Just didn't have much flavor to it IMO, and I had to thicken the gravy. Won't be making again.

Busy Day Barbeque Brisket

Followed this recipe exactly - I was hesitant about the amount of cayenne pepper but decided to try it as written. VERY spicy, even for my husband who has a much higher tolerance level than I do. I could adjust it but I'm not sure the ratio of the remaining spices worked either. I think I'd put in more cumin and less thyme, to start. Regardless, great starter idea for me as far as the liquid smoke and BBQ sauce. Will use as an idea but create my own spice rub.
