Bacon Ranch Chicken Skewers

These were by far the best skewers I have ever had. We use Harvestland organic chicken in our house and it was so tender after marinating in the ranch mixture for 3 hours. I used Sriracha instead of chili paste and I cooked the bacon in the microwave for about 2 mins (1 min on each side) because we don't like chewy bacon at all! I added some red peppers and extra onions to the skewers. I made a side of ranch & Sriracha for us to dip the skewers in. We made 5 of them- for 2 people- and ate every one. They were delicious and I can't wait to make them again!!

Fiery Fish Tacos with Crunchy Corn Salsa

These are great fish tacos! I made it exactly as stated, except I adjusted it for 2 people. I also add a pinch of Old Bay to the cayenne pepper mix. We like spice! I think you could substitute any other variety of fish, but the tilapia is good because it is so light. Thanks for the recipe.

Slider-Style Mini Burgers

These burgers were great and very easy to prepare. I cut the recipe in half and used the "sauce" for the top of the rolls like someone else mentioned. I also used potato dinner rolls instead of the sweet rolls. I wrapped them tightly in aluminum foil and cooked them for about 15 minutes. They turned out great! The only downfall.. they did not re-heat very well so they are not good leftover (in my opinion). I did; however, save some of the meat for burgers later this week.

Chicken Stir-Fry

This was a great stir fry recipe. I followed the directions, but did add some Schezuan sauce with the water and chicken bouillon to add a little kick. It was perfect. I used to buy frozen veggies and just use regular stir fry sauce. Not anymore. This is my new stir fry recipe!

Slow Cooker Chicken and Dumplings

This recipe was delicious. I used chicken tenderloins instead of breasts, left out the onion and used frozen dumplings instead of the biscuits. I also used chicken broth instead of water and spiced up the chicken with sea salt, ground pepper, Montreal chicken seasoning, paprika and garlic powder. I let the chicken cook in the broth and soup for about 3 hours (on high) and added the dumplings for about 2.5 hours (on low). The chicken shredded nicely and the dumplings were perfecly cooked. Yum!

Salsa Chicken

Great recipe. The whole family liked it. I used hot salsa and added some jalapeno peppers at the end because we like spicy. Delicious!

Fast and Easy Turkey Pot Pie

This was an easy recipe and tasted pretty good as well. I prepared the pot pie in the morning and threw it in the oven for dinner. I baked it for an hour and put it on broil briefly in order to get a crispier crust. The only thing it was missing was potatoes. Next time I might try cream of potato soup in place of cream of chicken soup.

Easy Meatloaf

I am not a huge fan of meatloaf, but this recipe was so good! I bought the meatloaf mix that they sell at the store (beef, pork and turkey). I sauteed the onion first and added a little less milk to the meat mixture. I also followed the advice of others and added some worcestershire sauce to the meat before baking. I let the meatloaf sit out for about 5 minutes before cutting. This meatloaf is better than mom's.
