Uh oh... I've fallen into a rut (vegetarian day ??)

I have definitely lost track of how many days I have been meatless now, but what I haven't lost track of is how often I've been eating out or ordering in lately! Since all of my basic recipes were non-vegetarian, I don't know what to go to in a pinch!
It's harder to keep the basic ingredients for vegetarian recipes on hand because more of them are fresh and don't last as long! If anyone can weigh in on the following questions I'd appreciate it:
What basics do you keep on hand in your kitchen so that you usually have what you need for a vegetarian recipe?
What is your best "go to" weeknight recipe?
