Uh oh... I've fallen into a rut (vegetarian day ??)

I have definitely lost track of how many days I have been meatless now, but what I haven't lost track of is how often I've been eating out or ordering in lately!  Since all of my basic recipes were non-vegetarian, I don't know what to go to in a pinch!  It's harder to keep the basic ingredients for vegetarian recipes on hand because more of them are fresh and don't last as long!  If anyone can weigh in on the following questions I'd appreciate it:

What basics do you keep on hand in your kitchen so that you usually have what you need for a vegetarian recipe?
What is your best "go to" weeknight recipe?

My BF's sister keeps homemade hummus on hand so she can snack on it while she figures out what vegetarian dish she can make for dinner. She doesn't like tofu. She makes a lot of soup with bread (homemade sweet potato vegan bread - so good!). I love soup as well, and it's so easy to make vegetarian. Keep potatoes on hand, there are lots of veggie dishes with potatoes in them. Also frozen dishes like peas, beans, corn... Fried rice is a great dish and easy to adapt to vegetarian if you have a recipe for chicken or shrimp fried rice.

Also - pasta! There are lots of easy alfredo recipes on this site, and you can make marinara sauce pretty quickly too. Good luck! :)

"Tasty Lentil Tacos" on here are relatively quick and very easy to make. Easy to keep on hand because lentil keep a while. Also, Alton Brown has a recipe for split pea burgers (google "alton brown food network split pea burgers" and it will come up) you can make them in advance and freeze for a quick and easy meal - you might want to look around for other veggie patty recipes to keep on hand in the freezer!

Each of those links will take you to my favorite vegetarian food. The Carrot Burgers I prefer as a side dish. They are awesome! The Jamaican Burgers I am experimenting with to make a link style sausage.

Pretty basic, but I always keep flour and yeast to make pizza dough, which is also my go to meal...great way to use up little bits of anything in the fridge!
