Slow Cooker Lentils and Sausage

This is a good starter. I've been making lentil soup for years. Here are the additions that I use: Fry 4 slices of bacon (cut in half) until crisp. Set bacon aside. Then sauté one onion, 2 cloves of garlic, 1 stalk of celery and 2 sliced carrots in the bacon grease. Put 1 lbs of dry lentils in the crock pot and add 8 cups of ham stock. Add the sautéed vegetables and 2 tbls. of Dijon mustard. Add 2 bay leaves and mix well. Cook on low for 6 hours, then add one can of diced tomato with chiles. Cook for another 2 hours then slice the sausage in even rings and brown for 5 – 8 minutes until browned on both sides (I usually use Polish Kielbasa) and add to the lentils. Just before serving, add a splash of wine vinegar.

Swabian Meatballs (Fleischkuechle)

This is by far the best recipe for Fleischküchle on this site. I've read others that are being deep fried (yuck). The only thing that I do different is I pad on some seasoned bread crumbs and they are always pan fried in butter, never baked or deep fried. These taste so good by themselves, or with numerous side dishes. I prefer German potato salad (the real stuff).

Shrimp and Asparagus Fettuccine

This was too bland for me. To save some time, I steamed the aspargus in the nuker (they come out soooooooo good). I sauteed the garlic in butter, then added the shrimp which I marinated for 1 hour with italian dressing (vinegar and oil based). Once all tossed together, I've added cajun seasoning and some pesto. This is a great dish and you can modify this to your taste buds.

Ham and Noodle Casserole

This is a good basic casserole. What I like about it is that you can adjust it and come up with awesome results. I used cream of mushroom soup and like to add spinach if I have it on hand. I also use sharp cheddar cheese because I like it better than swiss. I sautee the onions and add garlic. In addition, at the end of cooking time, I brown seasoned bread crumbs in butter and put it on top of the casserole after it finished baking. Yum, yum yum. I do cover the casserole to prevent it from drying out.

Winter Lentil Vegetable Soup

This is very good the way it is. However, I do add smoked sausage and once the soup is done, add a splash of vinegar. This is how my Mom used to make it.
