Un-Slimy Okra

I can't believe I didn't write a review on this last summer. I was looking through my reviews so I could find the recipe again and it wasn't there. I made it once last summer and it was so good, I ended up making it 2 or 3 more times for dinner guests. It did turn out nice and crunchy with a healthy fat from olive oil added instead of deep frying. Thanks for the recipe!

Insanely Easy Vegetarian Chili

I made this for a group of heart patients. Most people were hesitant to try this because the title has vegetarian in it. I think they thought it was fullof tofu or something. I started calling it vegetable bean soup after a while and all of a sudden they loved it! I made it in a slow cooker just so I could keep it warm for a long period of time. I left out the mushrooms just because I don't care for them. It was very good and healthy too!

Lasagna Alfredo Roll Ups

I made these for supper club. I baked a large boneless skinless chicken breast and added it to the spinach filling. You really couldn't taste the chicken so it was probably not necessary. Everyone loved these!

Lasagna Spirals

I made these for supper club. I used cream cheese instead of ricotta cheese because the alfredo version called for that and I wanted to keep things simple. I also added a little chopped, cooked chicken to the filling. It was delicious. Very good reheated as well.

The Best Rolled Sugar Cookies

Made these for Chistmas 2009 and 2010. We always have tons of homemade candy that is great, yet these cookies are always gone by the end of the day. Great cookies!

Crustless Spinach Quiche

Made for a breakfast at wimbledon party we had earlier this month. Made as stated, but there was not enough egg to cover the spinach mixture so i added 2 more eggs. i also added a little chopped garlic. i used a 16oz block of cheese and shredded it myself. it was better than the cheddar sausage egg casserole i made!

Basil Shrimp

This was excellent. Followed the recipe as written except only marinated for about 20 minutes before grilling. Bought a little basil plant and plucked the leaves straight from the plant to the marinade. Made for a group of 6 dinner guests. ALL loved it and wanted the recipe. Will make again for sure! Great for a summer cook-out.

#1 Pumpkin Spice Cookies

Delicious if you like pumpkin spice cake. This is very similar but in small little round packages. I made these for a friend in the hospital that loves pumpkin bread along with a chocolate chip recipe from this site. He shared the choc chop cookies w/ his friends, but no one was allowed any of his #1 pumpkin spice cookies.

Grilled Bacon Jalapeno Wraps

The 1st time I made these about a month ago, I added a little ranch dressing seasoning mix to the cream cheese. I made the mistake of reading a review that suggested I cut the bacon in half before wrapping the jalepenos. This probably would have been ok except I bought the jalapenos at the local Farmer's market and they were huge. I couldn't get half a slice of bacon all the way around so pinning it to the jalapeno was difficult. They kind of fell apart on the grill. They were still DI-LICIOUS so they still get 5 stars. The 2nd time I made them for visiting family, it started pouring rain so I had to bake them in the oven. It took way too long (for a hungry crowd) and the bacon made a big greasy mess. HOWEVER, they still disappeared in seconds and people were asking for more. They must not have been too bad. :)

Chewy Peanut Butter Brownies

Followed the advice of FOODWIZ and just mixed everything by hand so as not to OVERmix. I added a handful of chocolate chips. They were wonderful! I used them as a base for brownie sundaes when we had company (including 2 little boys) over for dinner. Everyone wished there was more!

Chocolate Coated Peanut Butter Crackers

I have made these since I was a child. Well, my mother let me help. They are super easy. I have yet to find someone that loves chocolate and peanut butter that does not love these. I use semi-sweet chocolate chips with a spoon of shortening for the coating. I am not a sprinkles fan so I just leave them off.

Fruity Fun Skewers

MAde for a wedding shower this past weekend. I love the rainbow look that someone posted a picture of here so I used the same: kiwi, pineapple, canteloupe, strawberries, and grapes. I arranged them on a large round tray with the fruit dip in the middle. People didn't really eat them during the appetizer portion of the evening, but they disappeared around dessert-time. Thanks for the idea.

Hot Chicken Wing Dip

People have to tear themselves away from this dip. Boiled chicken, shredded, dumped all ingredients into crock pot. Served w/ frito scoops. My husband said he would have liked it a bit spicier, but we like really spicy food. He also said he liked it just as well cold the next day.

Roasted Garlic

You MUST like garlic a lot for this one...which I do! This turned out perfect. Easy to spread onto crusty Italian bread. Pairs lovely with red wine.

Prosciutto Cups

This was great to me because I took some other reviewer's advice and added different cheeses to the filling. I bought expensive Boar's Head Prosciutto sliced sandwich style and made 24 mini-muffin cups full and had PLENTY of prosciutto left. So I may only get about a half pound next time. The cups were a little difficult to make, but if the meat starts falling apart, just shove it in there. It seems to hold its shape well after baking. I mixed 1/2 cup of ricotta w/ 1/2 cup of feta a bit of parmesan. I used all 10oz of a frozen spinach package so mine was REALLY spinachy. I would recommend mixing the garlic in with the ricotta to get an even mix. The garlic kind of stuck in one corner after mixing and left some bites a bit TOO garlicky (if that is possible :)) the end product was good. It was a nice low carb addition to the gathering. It went really well with red wine. It also was very good cooled down or hot. It reheated well the next morning in the microwave for breakfast too.

Blackened Chicken

Made this last night for dinner. Thought it was good. I like really spicy food and thought this was a mild spicy flavor...not TOO hot. Made according to directions except had to leave in oven for about 20 minutes, but I had 2 thick breasts of chicken. It went over really well. Next time I may follow another reviewer's advice and slice up breasts into strips because I really wanted the blackened flavor on every bite.

Chocolate Trifle

I stuck pretty closely to this recipe except crushed some heath bars for a topping. i used a fudgy brownie mix. if you like chocolate (which i do!) then this is the dessert for you! My mom makes a version of this she calls death by chocolate with additional ingredients of kaluha over the brownies. It is divine.
