Mini Pineapple Upside-Down Cakes

This was yummy. Made them for a bridal shower. Wish the pineapples were smaller to fit the little cakes or the cakes were bigger to fit the pineapples. That was the most time consuming part- trying to make them look as pretty as they do on some of these pictures.

Insanely Easy Vegetarian Chili

I made this for a group of heart patients. Most people were hesitant to try this because the title has vegetarian in it. I think they thought it was fullof tofu or something. I started calling it vegetable bean soup after a while and all of a sudden they loved it! I made it in a slow cooker just so I could keep it warm for a long period of time. I left out the mushrooms just because I don't care for them. It was very good and healthy too!

Grapefruit Margaritas

This is a lot like my recipe for beer margarita except replacing grapefruit juice for the beer. I liked these better, but I LOVE grapefruit juice!!! I used 100% juice which is a little tart for most people, but I thought the ingredients were perfect together. I will most definitely make these again!!!

Golden Rum Cake

YUMMY! Made this as the dessert portion of my all girls supper club. I was rushing to get it finished so I forced it our of the bundt pan and it fell apart a bit. But the show must go on so I placed it on the serving platter and toted it to the hostesses house. After dinner, I was about to slice and serve and realized all the little broken pieces were gone. Turns out some of the ladies were nibbling on it as an appetizer. Needless to say, there was none left by the end of the evening. Will definitely make again but will grease pan with more shortening (i used sparingly before) and will allow more time for it to cool before dumping onto platter.

Football Cheese Ball

Good taste and good idea. I am not the best at making a ball of cheese look like a football I have found. I attempte the crumbles bacon for the outer layer but that was going to take a TON of bacon and I didn't have much on hand. I tried leaving the taco seasoning on the outside, but if you plan to wrap the ball up and tote it anywhere, the seasoning either sinks into the cheese or gets stuck on the plastic wrap and you have a really strange colored football. My advice: bring the taco seasoning with you and sprinkle it on once you get to yur destination. The cheese slices for laces turned out well. Despite the appearance of MY football, half of it was gone by the end of the game so that earns it 4 stars. Had all of it been eaten like most appetizers I bring, it would have recieved 5.

Easy Pumpkin Cream Trifle

This turned out way better than it sounded. I made some pumpkin muffins I didn't care for that much. I was heading to a football party so I thought I would try to salvage the muffins and turn them into something else. I found this recipe. There was none left by the end of the game. I did follow the advice of others. I had 3 layers including a cream cheese and cool whip mix, a vanilla pudding/pumpkin puree mix and pumpkin muffins torn in bite-sized pieces. I bought sugar coated pecans and crushed for the topping.

Chocolate Pretzel Rings

These were super easy! I used rolos on top of pretzels. After they melted a little in the oven, I took a pecan half and smushed it down. Everyone loved them.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Yes, cookie dough definitely turns to cookie when you bake it. The cupcake was still yummy. The combo was a little strange. I tried to get creative and use mini-snickers in the middle, but had to refrigerate the cupcakes after I put cream cheese icing on them which equals hardened snickers. Wish i cut put cookie dough in after they cooked,but I have no idea how. Worth a shot, but I probably won't make these again.

Chocolate Chip Cheese Ball

Absolutely delicious if you are a sweets-lover and a chocolate fan! I ate this at a bridal shower. The hostess served it with chocolate and honey graham cracker sticks. I loved it so then made it for a work party. I had severeal people ask me for the recipe. It's a KEEPER!

Chicken Cheese Ball

I had this at a party and couldn't believe it contained canned chicken. I made it later for another party and it was well-liked. THEN I made it at the beach for a crowd of hungry guests. They watched me make it and very few people ate it because I used chicken from a pouch. I am pretty sure if they had not seen me make it, they would have liked it as much as me. I also think it is better if it has a few hours to sit and let the flavors mesh. I will make it again, especially because it is SO EASY! You can use low-fat cream cheese without changing the taste too much.

Brown Sugar Meatloaf

This was one of the best meatloaf recipes I have ever made. I made a bit more of the ketchup brown sugar topping. I used oatmeal instead of cracker crumbs for a bit of fiber. I used half ground turkey breast and half lean ground sirloin to cut the fat. My husband loved it and so did I.

Blue Cranberry Sauce

This turned out better than expected for me. I wanted to use fresh cranberries but was afraid it would be too tart for my guests. It was almost too sweet! Most people liked it. I would make it again but probably cut the sugar in half because the fresh blueberries do such a good job of makeing it sweet enough. Also love the fact that it contains 2 anti-oxidant power houses (the blueberries and cranberries)!

Bloody Mary Chicken

I thought the taste was excellent. The acid went to town on the chicken and it totally fell apart. I wasn't expecting that so that is why it got 4 stars, but I will definitely use this recipe if I want tomato based, bloody mary spiced shredded chicken as a base to a recipe.

Absolutely the Best Chocolate Chip Cookies

Used butter instead of shortening. These were great. Don't leave them sitting on the pan for more than a minute after you take them out of the oven or they get TOO crispy.

Alienated Blueberry Muffins

Not bad but not that good either. The blueberries sunk to the bottom because the batter was pretty thin. This was edible but not worth the effort or the calories in my opinion.

White Chili with Chicken

Very good. Made this for a healthy recipe. Used college Inn 50%less sodium low-fat chcken broth. Calculated 1/6 of the recipe to be= calories: 215, Total Fat:4g, monounsaturated fat:1.5g, polyunsaturated fat:0.8g, Saturatde fat:0.3g, trans fat:0g, Sodium:804mg, Total Carbs:23g, Fiber=6.3g, Protein:18g. In conclusion: taste was great. This is a low-fat, high fiber meal. Still too high in sodium. Substituting dried beans and homemade broth would help, but would also add a considerable amount of time to the cooking time.

A Firefighter's Meatloaf

I followed the recipe except I used a brown sugar BBQ sauce and a bit more of it. I chose very lean ground beef. I made 8 mini loaves instead of 1 big one so I only cooked it for 45 minutes then 15 minutes, respectively. A family friend joined us for dinner. He and my husband both thought it was very good. I think we all prefer the ketchup, not because this was bad, but because it is the taste we are accustomed to having with meatloaf. However, I set a bottle of ketchup out and nobody used it. I would make this recipe again.

Salsa Chicken

Super Easy! I have made this many times with a few variations. I spread a thin layer of black beans on the bottom of the casserole dish before adding the chicken. In 40 minutes or so you've got a healthy 1-dish meal full of fiber and protein. I typically squeeze fresh lime juice on the chicken before sprinkling on the taco seasoning for a tangy kick. I have used both salsa and canned diced tomatoes to top the chicken and both variations are yummy. A little cheese is nice- I choose a strong flavor like sharp cheddar. Optional: add a few crushed corn chips or tortilla strips.

Bahama-Mama Pork Chops

Good. My husband does not typically like fruit on dinner-type foods, but he actually liked this pretty well. I like others added some onion and green bell peppers and though it balanced the fruit out VERY well. I did make sauce for 4 chops but then only made 2 chops so I should have backed off on the sauce a little. The extra sauce made the rice I served with the pork a bit soupy.

Amazing Pork Tenderloin in the Slow Cooker

I made this for dinner a few nights ago and it was delicious! Husband LOVED it. Great flavor! It was very moist and tender. I did cut slits into the pork before cooking and stuffed it full of fresh garlic. My slow cooker has a 4 hour setting that is "high". After 3 hours the pork split down the middle because it was a little too tender. I turned it to warm after that to finish preparing the side dishes.
