Sausage Stuffed Jalapenos

I have made a version of these before. I used shredded cheddar cheese and added a smidge of ranch dressing seasoning mix to the cream cheese instead of using the dressing. I also grilled them for about 15 minutes. I don't know if I chose really small jalepenos or what, but these things had some heat. I scraped the insides out the best I could. They were still awesome and were all gone by the time the main course was ready. We just all had a little tear in our eye after each bite and drink to chase the heat. Would still make again ;)

Red Potato Bites

2 words: time consuming! I brought these to a get-together. Everyone brought a heavy appetizer. There were tasty and were eaten quickly. I just thought I would never be ready in time b/c I spent so much prep time on the food.

Blackberry Peach Pie

I should probably blame the cook for this one. I followed the recipe almost exactly. I used fresh fruit and a store-bought crust. The refrigerated pie crust fell apart when I tried to shape it. Since I wasn't able to seal the crumbly pie crust, the liquid boiled over into the oven mostly. The blackberries and peaches tasted a little odd together to me. I like them both separately. I probably will not make this again, but if I do I will use a frozen pie crust or make my own.

Chewy Peanut Butter Brownies

Followed the advice of FOODWIZ and just mixed everything by hand so as not to OVERmix. I added a handful of chocolate chips. They were wonderful! I used them as a base for brownie sundaes when we had company (including 2 little boys) over for dinner. Everyone wished there was more!

Grilled Bacon Jalapeno Wraps

The 1st time I made these about a month ago, I added a little ranch dressing seasoning mix to the cream cheese. I made the mistake of reading a review that suggested I cut the bacon in half before wrapping the jalepenos. This probably would have been ok except I bought the jalapenos at the local Farmer's market and they were huge. I couldn't get half a slice of bacon all the way around so pinning it to the jalapeno was difficult. They kind of fell apart on the grill. They were still DI-LICIOUS so they still get 5 stars. The 2nd time I made them for visiting family, it started pouring rain so I had to bake them in the oven. It took way too long (for a hungry crowd) and the bacon made a big greasy mess. HOWEVER, they still disappeared in seconds and people were asking for more. They must not have been too bad. :)

#1 Pumpkin Spice Cookies

Delicious if you like pumpkin spice cake. This is very similar but in small little round packages. I made these for a friend in the hospital that loves pumpkin bread along with a chocolate chip recipe from this site. He shared the choc chop cookies w/ his friends, but no one was allowed any of his #1 pumpkin spice cookies.

Basil Shrimp

This was excellent. Followed the recipe as written except only marinated for about 20 minutes before grilling. Bought a little basil plant and plucked the leaves straight from the plant to the marinade. Made for a group of 6 dinner guests. ALL loved it and wanted the recipe. Will make again for sure! Great for a summer cook-out.

Chicken Salad

I am obviously in the minority here. I prepared the night before as suggested for an easy lunch for family the next day. I gave the options of crackers or croissants and nobody wanted seconds which is rare in my family. I had the leftovers today and it was a bit bland. I was generous with the salt and pepper. Sticking with just ok for my rating.

Crustless Spinach Quiche

Made for a breakfast at wimbledon party we had earlier this month. Made as stated, but there was not enough egg to cover the spinach mixture so i added 2 more eggs. i also added a little chopped garlic. i used a 16oz block of cheese and shredded it myself. it was better than the cheddar sausage egg casserole i made!

Avocado Wreath

I liked the idea of shaping guacamole into a wreath for a Christmas party. I used tomatoes for holley berries and cilantro for the bow. The only problem was it looked like a runny, green mess once people started digging in. So only the people that were there first could appreciate what it was supposed to look like. I used my usual guacamole recipe with avocado, lime juice, jalepenos, tomatoes, onion and cilantro.

Lasagna Spirals

I made these for supper club. I used cream cheese instead of ricotta cheese because the alfredo version called for that and I wanted to keep things simple. I also added a little chopped, cooked chicken to the filling. It was delicious. Very good reheated as well.

Lasagna Alfredo Roll Ups

I made these for supper club. I baked a large boneless skinless chicken breast and added it to the spinach filling. You really couldn't taste the chicken so it was probably not necessary. Everyone loved these!

Tomato and Mozzarella Bites

Very pretty! However, the cheese started drying out very quickly after I set the tray out. It tasted much better when I started making them than when they actually were eaten just about an hour later.

Texas Caviar I

I have made many dfferent variations of this recipe. They have all been good. This one is no exception. Very colorful! Pretty healthy with lots of veggies and fiber from beans/peas. I used an olive oil based italian dressing. Can used baked chips.

Doubled the recipe for a large group. Very high fat. wish it had a little more seasoning without having to add more salt since it already had a ton of sodium. Overall- most people liked it, especially the guys.
