Easy Chocolate Chip Pound Cake

I made this for supper club Friday night. It went over very well. I used a paper towel to line my Bundt pan with vegetable shortening. I used pistachio pudding mix instead of chocolate. I only used 1/2 cup of canola oil (that's all I had on hand). I mixed the ingredient without the eggs, then added them one at a a time. Then folded in Ghirardelli chocolate chips. I baked for a full hour.

Un-Slimy Okra

I can't believe I didn't write a review on this last summer. I was looking through my reviews so I could find the recipe again and it wasn't there. I made it once last summer and it was so good, I ended up making it 2 or 3 more times for dinner guests. It did turn out nice and crunchy with a healthy fat from olive oil added instead of deep frying. Thanks for the recipe!

Jalapeno Margaritas

LOVED THEM. SO DID MY HUSBAND. WHEN SHAKED WITH SEEDLESS BUT FRESH JALAPENOS, YOU GET A NICE MILD SPICE. IF YOU WANT A MORE BURNING YOUR LIPS KIND OF DRINK, MUDDLE THE JALAPENOS A BIT IN THE SHAKER BEFORE ADDING OTHER INGREDIENTS. FIRE!

15-Minute Herbed Chicken

Made it yesterday for lunch as written except substituted chicken broth for milk b/c I was out of milk. It was quick and easy and pretty good except a little salty (prob from soup + broth). I took the leftover chicken, chopped it up, combined it with the rest of the rice and added about 1/4 of feta cheese and 2c steamed broccoli then topped it with a few breadcrumbs and butter. Baked it for 20 min and it was a nice change-up for dinner.

A to Z Everything-but-the-Kitchen-Sink Chocolate Chip Cookies

I made according to the recipe except without cornflakes (didn't feel like paying $4 for a box just to use a cup) and coconut (hubby is allergic). Great! Spices were strong but I thought that is what makes this cookie different from every other cookie. Gave away many to friends so we wouldn't eat all 60 servings, although we probably could have.

Chocolate Trifle

I stuck pretty closely to this recipe except crushed some heath bars for a topping. i used a fudgy brownie mix. if you like chocolate (which i do!) then this is the dessert for you! My mom makes a version of this she calls death by chocolate with additional ingredients of kaluha over the brownies. It is divine.

Quick and Super Easy Chicken and Dumplings

Quick and easy? Yes. I followed the recipe for the dumplings. I used boiled chicken. It was a little bland and my dumplings were like little puffy biscuits.

Margarita Dressing

I thought this was just ok. Made it for supper club to go on salad paired with a southwestern style chili. To me it was inconsistent. Either it was a little bland or a very strong honey taste. I shook it well each time, but the ingredients didn't blend as well.

Baked Zucchini

Made this last to go with baked chicken. I have used parmesan in the past, but this time added a bit of garlic powder and topped with a sprinkle of cheddar cheese in the last few minutes of baking. They were both good!

Blackened Chicken

Made this last night for dinner. Thought it was good. I like really spicy food and thought this was a mild spicy flavor...not TOO hot. Made according to directions except had to leave in oven for about 20 minutes, but I had 2 thick breasts of chicken. It went over really well. Next time I may follow another reviewer's advice and slice up breasts into strips because I really wanted the blackened flavor on every bite.

Prosciutto Cups

This was great to me because I took some other reviewer's advice and added different cheeses to the filling. I bought expensive Boar's Head Prosciutto sliced sandwich style and made 24 mini-muffin cups full and had PLENTY of prosciutto left. So I may only get about a half pound next time. The cups were a little difficult to make, but if the meat starts falling apart, just shove it in there. It seems to hold its shape well after baking. I mixed 1/2 cup of ricotta w/ 1/2 cup of feta a bit of parmesan. I used all 10oz of a frozen spinach package so mine was REALLY spinachy. I would recommend mixing the garlic in with the ricotta to get an even mix. The garlic kind of stuck in one corner after mixing and left some bites a bit TOO garlicky (if that is possible :)) the end product was good. It was a nice low carb addition to the gathering. It went really well with red wine. It also was very good cooled down or hot. It reheated well the next morning in the microwave for breakfast too.

Fast and Easy Chip Dip

Made this with 16oz of LIGHT sour cream, and only 1/4 cup light mayo + 1 pkt ranch dressing mix. It was still really creamy and flavorful AND BEST OF ALL EASY!!! Served with celery, carrots, cucumbers, and cauliflower for a small crowd.

Roasted Garlic

You MUST like garlic a lot for this one...which I do! This turned out perfect. Easy to spread onto crusty Italian bread. Pairs lovely with red wine.

Hot Chicken Wing Dip

People have to tear themselves away from this dip. Boiled chicken, shredded, dumped all ingredients into crock pot. Served w/ frito scoops. My husband said he would have liked it a bit spicier, but we like really spicy food. He also said he liked it just as well cold the next day.

Carla's Fruit Dip

Very good. Made for wedding shower with fun fruity skewers. It was just sweet enough. I did use 16oz each of marshmallow creme, cool whip, and cream cheese for a large crowd and had MORE than enough.

Fruity Fun Skewers

MAde for a wedding shower this past weekend. I love the rainbow look that someone posted a picture of here so I used the same: kiwi, pineapple, canteloupe, strawberries, and grapes. I arranged them on a large round tray with the fruit dip in the middle. People didn't really eat them during the appetizer portion of the evening, but they disappeared around dessert-time. Thanks for the idea.

Chocolate Coated Peanut Butter Crackers

I have made these since I was a child. Well, my mother let me help. They are super easy. I have yet to find someone that loves chocolate and peanut butter that does not love these. I use semi-sweet chocolate chips with a spoon of shortening for the coating. I am not a sprinkles fan so I just leave them off.
