Greek Chicken Pasta
This recipe is one of my husband's favorites! It's also a great recipe for company with an added salad and bakery bread. I do make a few modifications to the recipe. I usually use at least 2 lbs of chicken, and season the chicken with salt and pepper first. I use at least 2 large tomatoes instead of only 1, double the feta cheese, and mix with a penne type pasta instead of linguini. With those small changes, it's a wonderful dish!

Slow-Cooker Pepper Steak
Love this meal! This is one that turns out so well, we bring it out for company as well. It's certainly not a budget meal, as Sirloin steak can be expensive. But it tastes great. I usually buy both green and red peppers, and I don't put in the peppers until 2 hours before it's done (if on low.) A 5 star meal!

Mexican Casserole
Simple, yet excellent meal!! As many others have done, I modified this receipe a bit, and it was fantastic. We used more chicken, all of the taco seasoning mix, doubled the salsa and mixed some of the cheese in with the mixture before transferring it into the dish. Next time, I'll probably double the entire recipe so we have more leftovers! We ate it by itself with cornbread, but if you wanted it to be more filling, you could probably serve it over rice or inside a tortilla. Lots of flavor. My husband and I loved it!!
