Slow Cooker Tamale Pie

My husband loved it! I used turkey instead of ground beef, and I added a can of tomatoes with chili seasoning. I was surprised how much the corn bread mix tasted like tamales. This recipe will be one of my regulars.

Walnut Pear Coffee Cake

This recipe is great. I made it to take to a Christmas luncheon and there was only one small piece left. My husband said it was great. My springform pan is only 8-1/2, so my cake took longer to bake. I also added a cup of oats to the recipe and I used fat free sour cream. I baked my cake for about 1 hour and 20 minutes. I'll make this one again.

Pineapple Carrot Bread

I took the advice of some other reviewers and only used half the sugar, added 1/2 tsp of nutmeg, and doubled the cinnamon. I added about 1/2 c. of raisins. I also added 1/4 c. of flax seed meal. It was awesome! Hubby loved it.

Blueberry Oatmeal Coffee Cake

My husband gave this recipe rave reviews. I added 1/4 teaspoon of vanilla to the batter, and I was out of brown sugar for the topping so I used regular sugar, butter, a small bit of cinnamon and about 1/4 cup of chopped pecans. I must say it was just about perfect. Great flavor and great texture. I will definately make it again.

Banana Banana Bread

I had four bananas that were getting ready to expire, and decided to try this recipe. I read the reviews and they were all great. My usual recipe includes vanilla and sugar as well as brown sugar. After reading the reviews, I had to embellish the recipe a bit. I added 1/3 tsp of cinnamon, 1/4 teaspoon of allspice, and 1/4 c. of ground Fiber One cereal. My eggs were jumbo eggs. I divided my batter into 2 smaller loaf pans. I sugared the sides of the loaf pan to give a sugary crust. My cooking time decreased to about 40 minutes. My husband is my cooking critic. He likes the new recipe but still prefers my traditional recipe. I think the difference revolves around the vanilla. We are so use to the vanilla flavoring it is hard for us to enjoy without it. This recipe makes a beautiful loaf, and is very moist.

Easy Walnut Raisin Biscotti

This recipe makes a great cookie everytime. I made 2 batches exactly as written. The 3rd batch- I deleted the raisins, and only used 1/2 cup of walnuts - in place of the raisins I used 1 cup of mini chocolate chips. They are wonderful. After reading the other reviews, I let the loafs cool until I could handle and then cut immediately. I found this kept me from getting alot of crumbling. I also used a "sawing" motion. I had great success. I made these for Christmas goodies and dipped the ends in melted white chocolate and sprinkled with red and green sugar. The batch with chocolate chips, I also dipped and sprinkled with chocolate sprinkles.

Mom's Peanut Brittle

I've made 4 batches of this recipe today and each one has been a winner. I did add more peanuts after the first batch, but I followed the recipe exactly as written and used a candy thermometer. Great recipe!

Sweet Potato Bread

My husband says these are the best! I wasn't sure about the orange peel and the sweet potato but they compliment each other. I used a canned sweet potato without a problem. I did muffins and put in the oven for about 25 minutes. You can't beat this muffin and a cup of coffee on a cold morning.

I made muffins and put in the oven for about 25 minutes. They were great! The sweet potato gives them a good texture. I used a canned sweet potato. I will definately make them again.

Slow Cooker Taco Soup

A great recipe for cold days. It is one easy and quick to go together when you are running late for work! I like to serve this soup in a tortilla lined bowl (just cut 3 or 4 slits in the tortilla and push into bowl) sprinkled with cheese. Absolutely yummy!
