Crispy Potato Pancakes

Great recipe! These are just like how my mom made them. I added a little parsley but otherwise stuck to the recipe. Delicious!

Raisin Buttermilk Coffee Cake

This was delicious! I am afraid it has been causing me to gain more holiday weight than usual! I did use raisins and I think I will add more next time. I did find that the raisins seemed to fall to the bottom of the cake though. I might stir them into the top of the cake when it is in the pan ready to go into the oven so that they might not fall all the way to the bottom. But it was still so good!!

Sweet Banana Bread

The best banana bread ever! Everyone has been asking me for the recipe. I did add more bananas. I didn't measure them. I just threw in what I had, and I found the more the better. I also haven't tried it with the walnuts, but it might be really good.

Appetizer Stuffed Mushrooms

This was an easy way to prepare a vegetarian side. i took them to Christmas dinner for my vegetarian sister and cousin. They both loved them. I'm glad I didn't saute the mushrooms because they mentioned how good they were because they weren't greasy. The only changes I made were that instead of breadcrumbs I used some leftover homemade vegetarian stuffing (which added to the flavor) and I did not sprinkle Parmesan cheese on after. They didn't seem like they needed it.

Stuffed Chicken Breasts with Cornbread Dressing

This is a great recipe. It was so good! I changed a few things after reading some of the reviews. I did not use the chicken liver, green pepper, or sage. I substituted a jar of turkey gravy for the soup. I also used a box of stove top stuffing instead of the corn bread. This worked out well. It was great leftover too.

French Onion Soup Gratinee

This soup turned out great! And I even didnt add all the herbs it called for. I only had dried parsley which I sprinkled in. I did not add a bay leaf. I didnt have any string or anything to tie up the thyme leaves so I just put them in the broth and removed them later which worked fine..they were still intact. I followed some suggestions to just use croutons and I did cut the Swiss cheese down a bit...it was still super cheesy. A delicious soup!

Easy Meatloaf

I dont know what I did wrong but when I tried this recipe, it was extrememly soggy. The meatloaf was basically floating away in juice. I actually had to pour some of it out. My boyfriend still liked it though. Maybe if I try a leaner hamburger it may fair better.
