Overnight Asparagus Mushroom Strata

Reviewed: Dec. 26, 2011
Excellent! Next time I might try it with a nicer cheese, like fontina.

Chicken Curry Puffs

They were good, but needed a little kick. Next time I will try substituting green apples for some or all of the potatoes.

Quinoa and Black Beans

Reviewed: Mar. 19, 2012
I made this when we had company who are vegan, with a side of fried platains. Yum! I did leave out the cayenne to make it a little more kid-friendly. We added tobasco to ours at meal-time and it was fantastic. I would recommend using a 3 to 1 broth to quinoa ratio (ie 3 cups of broth for every 1 cup of quinoa). This recipe says it makes 10 servings, which may be true if you are serving it as a side dish. As a main course, it probably makes about 4-5 servings.

Whole Grain Waffles

Reviewed: Jan. 17, 2012
I did not have any wheat germ, so substituted oat bran. I had flax seed on hand, but next time I will grind it in my coffee grinder. The seeds kept getting stuck in my teeth! The batter was a little thin, so I only poured about 2/3 the amount I usually do in the waffle maker to prevent it from pouring out the sides. They puffed up really nicely though.

Santa's Favorite Cake

Reviewed: Jan. 3, 2012
This cake was way too sweet for my liking, and I really like sweet things. I brought this to Christmas dinner. Hardly any of it was eaten.

Sour Citrus Pork Tacos with Caramelized Root Vegetables

Reviewed: Mar. 1, 2013
These tacos were decent, but I had a hard time getting over the 2 very distinct flavors of the pork and vegetables being mixed together. It just tasted a little strange, but in a good way. I did like it more when I added guacamole on top.

Beef Taco Bake

Reviewed: Mar. 1, 2013
On its own, this recipe was no better than Hamburger Helper and it has very little nutritional value. However, add some fresh veggies on top and it's pretty good. We added shredded lettuce, diced tomatoes, avocados and sour cream.

Cajun Chicken Pasta

Reviewed: Dec. 26, 2011
YUM!!!! The heavy cream makes this meal a bit heavy and too thick, so try using half and half or just milk with a tablespoon of cornstarch mixed in. The first time I made this I didn't have any red peppers or onions, but it was still really delicious. The second time I made it, I used the peppers, but it wasn't nearly as good. You can really experiment with this one and add any vegetables you have on hand. I like it with mushrooms and sundried tomatoes for a little color and flavor.
