Cajun Chicken Pasta

YUM!!!! The heavy cream makes this meal a bit heavy and too thick, so try using half and half or just milk with a tablespoon of cornstarch mixed in. The first time I made this I didn't have any red peppers or onions, but it was still really delicious. The second time I made it, I used the peppers, but it wasn't nearly as good. You can really experiment with this one and add any vegetables you have on hand. I like it with mushrooms and sundried tomatoes for a little color and flavor.

Santa's Favorite Cake

This cake was way too sweet for my liking, and I really like sweet things. I brought this to Christmas dinner. Hardly any of it was eaten.

Whole Grain Waffles

I did not have any wheat germ, so substituted oat bran. I had flax seed on hand, but next time I will grind it in my coffee grinder. The seeds kept getting stuck in my teeth! The batter was a little thin, so I only poured about 2/3 the amount I usually do in the waffle maker to prevent it from pouring out the sides. They puffed up really nicely though.

Quinoa and Black Beans

I made this when we had company who are vegan, with a side of fried platains. Yum! I did leave out the cayenne to make it a little more kid-friendly. We added tobasco to ours at meal-time and it was fantastic. I would recommend using a 3 to 1 broth to quinoa ratio (ie 3 cups of broth for every 1 cup of quinoa). This recipe says it makes 10 servings, which may be true if you are serving it as a side dish. As a main course, it probably makes about 4-5 servings.
