Asian-Glazed 'Melt-in-Your-Mouth' Pork Tenderloin

I halved the recipe for both the brine and the glaze -- and there was PLENTY of both for a 1 1/2 pound pork tenderloin. Eight hours of brining makes for a somewhat salty end product.

Texas-Style Baked Beans

Very spicy! I would suggest cooking your chopped onions before adding them to the slow-cooker, lightly draining 2-3 cans of the pork and beans, and increasing the amount of ground beef.

Cheese and Sausage Stuffed Zucchini

I used 4 LARGE zucchini - almost 1 pound each - and the amount of filling came out perfectly. There was so much food, it had to be baked in 2 dishes.

The Best Meatballs You'll Ever Have

These were pretty good. Be sure to crushe the croutons AFTER you measure out the 3/4 cup. The mustard flavor is a tiny bit too strong. I baked mine for 40 minutes at 350.

Slow Cooker Salisbury Steak

Now THIS is comfort food! I mixed the milk and breadcrumbs together first to make a panade. I didn't have Italian seasoned breadcrumbs, so I added 1 tsp dried Italian seasoning to my plain breadcrumbs. Substituted 3/4 cup Johnny's French Dip Au Jus concentrate for the packet mix and omitted the water. YUM!

Creamy Ranch Chicken and Rice

At first I thought there was too much sauce for the amount of chicken in the recipe. But when you serve the sauce over the rice, the proportion is just right. This is very good.

Chili Mac Casserole

This is real comfort food. The only changes I might make would be a bit more chili powder, and a bit less salt. I served fruit cocktail with mine, and a chocolate pie for dessert.

Beefy Baked Ravioli

Allow casserole to "set-up" a few minutes before serving. I used 2 cups of mozerella cheese, because that is what I had on hand. Serve with green salad and garlic bread.

Three Animal Italian Meatballs

My advice would be to add a bit of salt to the recipe. The recipe made nearly 50 meatballs. I baked mine in some leftover jarred spaghetti sauce.

Turkey and Hash Brown Casserole

This was kind of bland. I am not familiar with a frozen hash brown producet in a 1lb size, so I used "Simply Potatoes" hash browns. The 1 cup cream of celery soup was odd too -- is that 1 cup of undiluted soup (which would leave some leftover) or 1 cup of canned cream of celery soup, prepared??

Zesty Porcupine Meatballs

Saucy - perhaps even a bit too saucy (there was lots of sauce left-over) due to the recipe using 2 cans of soup, when all other porcupine meatball recipes call for only 1 can. I will return to Better Homes & Gardens classic porcupine meatball recipe.
