Keeping my peppers fresh

Im recenty Type 2 Diabetis.. and I have been trying to eat better.

My husband choppes up the green / yellow/ and red pepper but they get a bit slimy after and \i would like to keep them a bit fresher...\
\its great.. i take out all the peppers/tomatoes/cucumbers and make a salad wit the picnh of these and a lot of this..hes made me buffet of sorts.


if anyone knows how to keep peppers fresher for a bit longer... that woul d be great

I do not chop up the peppers unless I neeed them immediately. Instead, I cut out only what I need for that serving- leaving the seed core in. The secret seems to be to make as few cuts as possible in the pepper. The rest of the pepper goes into a ZipLoc and put in the vegetable conditioner of the fridge. If it has been a few days since I last used the pepper, I'll remove the exposed cuts and cut out what I need and return the pepper to the bag. I have kept cut peppers for about ten days.
