Strawberry Cake from Scratch

I work as an RA in a college dorm and I am always looking for new and fun cake/cookie recipes to make for my residents. This one was a huge hit, and not that hard to make. The cake tasted good, but like some of the reviews it was REALLY dense. I think next time I make it, I will try separating the egg whites from the yokes and maybe adding a little less flour. For my icing I made a simple cream cheese icing: 1 8oz. block cream cheese 2 teaspoons vanilla 2 tablespoons milk 1 box (4-5 cups) powdered sugar However, instead of putting the milk in, I added 2 tablespoons of the strawberry puree and it made a delicious strawberry cream cheese frosting that everyone commented on. I will keep experimenting until I can find a way to make it a little lighter. But good cake.

Tomato and Bacon Pasta Bake

It was a good recipe. I used 16 oz of pasta and I think that 18 oz may be too much for the sauce. I also added some red pepper powder to the sauce for a little more spice. It was easy with ingredients that were already in the pantry.

Kielbasa with Pasta

I made this for dinner and it was SO delicious. All my friends loved it! I added a cup of cream to the sauce and simmered it till it was a little thicker and put in some red pepper for a little more flavor. But it was easy and really delicious!

Chicken Bog

I grew up eating Chicken Bog, and this recipe is similar to how we make it, but Ive never heard of it using Italian Seasoning. My mom and I used to do the whole chicken thing, but we've started taking shortcuts. Instead of taking all the time to boil a whole chicken and make our own broth, I just buy like Swanson chicken broth. And I buy a traditional flavored rotissery chicken and peel the skin off then shred the meat. I then pour the broth into my pot and add sausage rounds and chicken, and then bring it to a boil before adding the rice. This incorporates the flavor of the sausage into the broth. Then you add your rice, salt and pepper to taste, and simmer it till it's cooked. Like I said, it's a short cut and cheating for sure, but it takes a lot less time, and tastes just as good. It never lasts very long around my house.
