World's Best Potato Salad
Best potato salad....creamy and delicious! Used only 1/3 c. sugar, be careful w/ the c'starch----use 2 scant t. and use the measuring spoon. Added olive salad and mayo w/o measuring. I omitted the celery seed b/c it wasn't on hand. No eggs either. It didn't seem to need either. Very, very good potato salad! This recipe is a keeper. Wish it wasn't so high in calories, though....the only down side!

Slow Cooker Beef Stew IV
Hubs is eating it right now and says it's great! I did tweak it, though. I hate my crock pot and don't use it anymore. It incinerates everything I make. I wish I still had my old 3 1/2 qt. Rival that I sold at a yard sale. It was too small but nothing ever ended up burnt to a crisp. I used my dutch oven and improvised.....had fresh, roasted tomatoes, so threw those in w/ a can of tomato sauce. I pared down the onions to 1 large and 1/2 of another large one. Par boiled the potatoes and then added. Also, threw in a jar of white onions, used fresh parsley, organic carrots, lots of celery. It tastes fantastic! Probably tripled the recipe since I bought a 5 lb. pkg. of stew meat from Sam's, for quick sale!

Chocolate Cupcakes with Caramel Frosting
These are sooooooooo melt-in-your-mouth delicious! My oven may be off but I baked them for only 13-14 minutes and they were done to perfection! The icing was wonderful and complemented the delicate cupcakes ideally! I am serving them to some ladies tomorrow and just hope they aren't all eaten by the time the guests arrive! I used about 1/3 c. of cocoa powder and light mayo. They are easy to make, too!
