Blueberry Cornmeal Muffins

These were very yummy and dredging the blueberries was definitely needed (which I did). I also followed the other reviewers' advice to increase the cornmeal to 3/4 of a cup. I replaced the wheat flour with a gluten-free mixture and it worked well. I also used oil instead of the melted butter and I used rice milk instead of cow's milk (which I made into "rice buttermilk" by adding vinegar). They turned out quite yummy!

It was very good and a lot stronger than the typical store bought mixes. My kids were a big fan of it and it worked well in almond milk as well (which I had made half the recipe with).

Chicken Chili Hash With Peppers & Cilantro

This was a great recipe with only a few changes needed. I did in fact have to cook the potatoes longer than the recipe stated. To the seasoning mixture, I added garlic powder, paprika and oregano. And when I added the seasoning and chicken mixtures back in with the potatoes, I also tossed in a small can of kidney beans. Then I scrambled up some eggs to serve on top. We had it for supper tonight and the best part was that everyone in my large family found something in it to like! We will definitely make it again!

Joey's Peanut Butter Cookies

This was a great recipe! I subbed the wheat flour for spelt and the white sugar for organic cane sugar, used rice milk instead of regular milk and crunchy natural peanut butter. The only thing I noticed is that the batter was really runny so I added a bit of extra flour. They were a hit! Thanks!

Michelle's Famous Washed Cranberry Sauce

This is an exeptionally good cranberry sauce! I usually hate the ones from the cans but this is so good I can eat it on leftover biscuits! The recipe is easy enough for my 4 year old to help on!

Apple Stuffed Pork Chops

I made the stuffing with pears and cranberries as I didn't have any apples on hand. I also added an egg to hold the stuffing together. Instead of stuffing the porkchops (mine were too thin) I put the stuffing in a glass dish and nestled the chops in the stuffing and cooked it all like that. Everyone in the family loved it.

Daddy's Sloppy Soup

Very good but it made so much it surprised me! I added great northern beans and some seasonings (oregano, basil, garlic, and a bit of cayenne pepper). I let it sit in the crockpot for the day and it was yummy! Although don't add the macaroni until an hour or so before you eat it otherwise they will grow too big!
