Mother of two boys and one girl, all grown up now. No grandchildren yet. Married to a wonderful guy who doesn't like gourmet food or desserts, just burgers and beer or tacos, doesn't give me much room to experiment on all kinds of recipes, which is what I really would love to do.

Shrimp Vermicelli Salad
This is a very comforting Summer salad, the cool tender pasta and the shrimp salad go well together on a hot day. Instead of Parmesan, I used Asiago Cheese. It sure did give the whole salad a good zing to it.

The Best Lemon Tart Ever
I made this recipe for my husband on his birthday. He loved it and I think it is any easy recipe to follow. I loved the shortbread cookie crust and the lemon filling is very delicious. You can't go wrong with this wonderful recipe...

Spinach Cheddar Muffins
I used 1 cup of white whole wheat flour and 1/2 cup of all purpose flour, I added 1/8 tsp of nutmeg and 1/8 tsp of dried crushed thyme also to the batter. I tried this recipe but I think it needed garlic butter with dried red pepper flakes, so I melted a 1/2 stick of butter with fresh garlic cloves and some red pepper flakes sprinkled in with a pinch of salt since the muffins needed more salt. I brushed this on top of the baked muffins and they tasted way better.
