Oven Pot Roast

I used a 5 lb. roast and doubled the other ingredients to make more gravy. Since some reviewers mentioned the thickness of the gravy, I added about 3/4 c. water, and it turned out perfectly. I also substituted cream of chicken soup for the mushroom and added carrots and celery. The meat took exactly 3 hours to cook, so I imagine a 3-1/2 lb roast would finish sooner. Excellent recipe but very similar to the Pot Roast in Foil recipe on this site. The latter is even simpler, so I will probably stick with it.

Holiday Brie en Croute

This is my favorite way to eat brie (so far)! The sweet and slightly tangy flavors of the raspberry and cranberry are a perfect fit for the pungent flavor of the brie. I was in a hurry to eat it and didn't wait the recommended hour, and that was a mistake since the melted cheese then leaked out.

Rempel Family Meatloaf

Meatloaf is one of those dishes I make every now and then to use up ground beef, but my family doesn't really love it -- until now! This recipe was a big hit. The only changes I made were to substitute Worcestershire sauce for the steak sauce and add a coating of ketchup on top before baking.

Cranberry Nut Stuffing

I thought this recipe sounded interesting but was a bit disappointed in the end with both the flavor, which was not very distinctive (maybe needed more cranberries?), and the appearance, which was kind of pinkish-gray in color. I think I would prefer whole cranberries in my stuffing so that you could tell and taste what they were.

Cranberry Gelatin Salad

Well, I goofed the first time I made this recipe and used 1 3-oz. pkg. jello instead of 1 6-oz. pkg. However, my guests loved it as a sauce on their ham and thought it was a delicious mistake. The second time, I followed the recipe correctly and loved the firm jello, too. Great taste, color and texture! I left out the pecans since my family is not big on nuts.

A Hearty Green Bean and Sausage Casserole

I think I liked this version better than traditional green bean casserole, but I'm giving it four stars because some of my other tasters really preferred no meat in their veggie side dish. I substituted cream of chicken soup for the cream of mushroom and canned green beans for the frozen.

Bacon N Egg Pizza

The kids loved it, hubby and I thought it was OK. At 30 minutes, the outside was getting extremely crispy, but the middle still hadn't set, so I pulled it out and we just ate the outside. I don't think the potatoes added much to the dish.

Quick Quiche

So easy and delicious! Although other reviewers experienced problems with cooking time, my quiche was golden and bubbly at exactly 35 minutes. I added extra bacon because my family loves it, but I can't wait to experiment with different cheeses and fillings. This quiche does have a more dense texture than a typical quiche, so don't expect it to be exactly the same. In fact, my kids thought it was very much like pizza.

Apple Radish BBQ Ribs

Excellent! I used apple cider instead of juice and we grilled the ribs instead of baking them. They were moist and tasty, and not too spicy (as I had feared with the horseradish), and the family loved them! I used 6 lb. of ribs, and there was so much sauce, I ended up saving half of it for another time.

Lattice Chicken Potpie

Very simple and tasty - the whole family enjoyed it. I cooked the veggies before mixing with the other ingredients. Had to pull the potpie out of the oven before 35 minutes because the crust was burning.

Smoked Salmon Quesadillas

I made these for a party last night, and they were a hit! I found it easier to mix all of the ingredients together and spread on the tortilla shells. I used 10" tortillas because that's what I had around the house; it made two of them.

Mini Pumpkin Muffins with Orange Drizzle

The batter for these muffins is thick, so they don't look especially pretty (lumpy on top), but they are delicious little morsels! I used the small Pampered Chef scoop to fill my mini-muffin pans, and I ended up with five dozen rather than three. I made the icing a little thicker, and there wasnt' enough for all the muffins. Maybe 3/4 c. powdered sugar instead? Pumpkin isn't usually my favorite flavor, but I will definitely make these again!

Dixie Pork Chops

This recipe was great but I made it a bit differently than directed. I browned the chops in an electric skillet, removed them to make the gravy, and then put them back in with the apples and raisins to braise (covered). One less pan to clean that way. Also, I think the directions missed what do do with the salt and sage. I ended up seasoning the chops with salt, pepper and sage to taste. I think apple juice or cider would also be a good substitution for the water and vinegar.

Salmon Patties III

I modified this recipe significantly and found it very flexible. Instead of salmon, I used tilapia leftover from a recipe my family didn't like. I think I probably used too much fish because the patties didn't stick together well, but I will know better next time. I also substituted chopped onion for the shallot, and since I didn't feel like boiling and mashing one potato, I substituted a few baked tator tots. Overall, a delicious way to get fish into my husband and kids!

Bacon Cheese Frittata

Great flavor and easy to make with ingredients around the house. I doubled the recipe and baked in a 9x13 pan for 45 minutes. Although the frittata firmed up nicely , there was a runny residue at the bottom of the pan that turned my kids off.

Sausage Scalloped Potatoes

I prefer cooking "the old-fashioned way," so I prepped this recipe on the stovetop and then baked in the oven for an hour. The kielbasa made a nice change from traditional ham. I thought the flavor needed an extra boost - I'm used to my mom's recipe, which uses cream of mushroom soup - but my family loved it and kept coming back for more.
