Sliced Tomatoes with Fresh Herb Dressing

Reviewed: Aug. 20, 2008
Easy and tasty, and a good use for bountiful summer tomatoes! Flexible, too - can vary the herbs to taste. I took a shortcut and sprinkled everything on top of the tomatoes, but I think I should have followed the directions and mixed the oil and herbs into a dressing. I also agree with the reviewer who recommended leaving the dish out of the fridge until served - not only does the cold change the tomatoes, but the olive oil congeals.

London Broil II

Reviewed: Aug. 11, 2008
I made the recipe exactly as directed and marinated the London broil overnight. It was very tasty and flavorful although perhaps not enough so in the middle. Would definitely make again!

Southwestern Rice and Bean Salad

Reviewed: Jul. 26, 2008
This made a very refreshing summer salad. I replaced the canned corn with fresh kernels from one cooked ear of corn. I had no picante sauce, so I substituted enchilada sauce. I think I may have also used more rice than the recipe called for (didn't measure), but it all turned out good.

Country Fried Steak and Milk Gravy

Reviewed: Jul. 22, 2008
OK, I'm a Yankee, and this is the first time I've eaten or attempted to make country fried steak. My family loved it! I used a combo of onion salt and garlic salt in place of the regular salt and substituted Crisco for the lard, and the flavor was good. Our only complaint was that the meat was chewy and tough. I will definitely try again and hope for better results.

Black Bottom Cupcakes I

Reviewed: Jul. 12, 2008
As many times as I have eaten Black Bottom Cupcakes, I had never made them before. This recipe was easy and delicious. I assume I need to keep them in the fridge because of the cream cheese in them, but they definitely taste best warmed up.

Lemon Blueberry Pie

Reviewed: Jul. 12, 2008
I was excited to try this recipe because I thought the flavor combination sounded good. However, I was disappointed with the end result - don't know if it was the variety of textures or flavors. Very few of the people who tried the pie liked it, so I would not make it again.

Raspberry Lemon Muffins

Reviewed: Jul. 1, 2008
These muffins had a nice flavor, but the texture was a bit chewy, as is typical of reduced-fat baked goods. Although some reviewers seemed turned off by the light color (no egg yolks), I thought the muffins looked appealing.

Raspberry Cream Muffins

Reviewed: Jun. 30, 2008
My husband and kids loved these muffins, probably because they are super-sweet, but that it what I dislike about them. I also found the batter far too thick to fold in the berries without breaking them, even though I used the sturdier black raspberries rather than red raspberries. However, I would probably make these again for my family when I need to use up some berries.

Lemon-Raspberry Muffins

Reviewed: Jun. 30, 2008
These muffins had the perfect texture - light and airy - and a delicious flavor. My kids thought they were too tart, so I may sprinkle sugar on top for them next time. The recipe is definitely a keeper!

Grilled Lemon Herb Pork Chops

Reviewed: Jun. 26, 2008
This recipe was so easy, quick and delicious - I will definitely make it again. Initially, I was skeptical because there was so little marinade, but it was enough. The pork chops were full of flavor after just two hours in the marinade.

Chocolate Mint Candies Cookies

Reviewed: May 26, 2008
Another 5-star rating -- we loved these cookies! I found that I had to let the mint set for several minutes (not just one) before it was soft enough to spread, but otherwise, the recipe went off without a glitch. I'm already thinking ahead to Christmas - these will be great for my neighborhood cookie swap!

Decadent Raspberry Brownies

Reviewed: May 26, 2008
These brownies were incredible. I did modify the frosting because I didn't have semi-sweet baking squares or cream on hand. Instead, I used half a bag of chocolate chips and sour cream, which provided a nice tanginess. I took the brownies to two different parties for Memorial Day weekend, and everyone devoured them! They are best if you leave them out of the fridge to warm up/soften before serving.

Cafeteria Macaroni and Cheese

Reviewed: Mar. 15, 2008
I read many of the reviews of this recipe, both good and bad, and was curious enough to give it a try. I would give it a 4 or 5 for flavor - loved the kick of the mustard, Worcestershire and cayenne (didn't have any hot sauce). However, I would rate the consistency a 1. Like other reviewers, I found the mac & cheese too gloopy and would prefer a creamy, white sauce-based mixture. My breadcrumbs browned enough that I didn't broil the casserole, so I found the butter in the breadcrumbs too much. The cheese is greasy enough that it could be topped with plain breadcrumbs - just enough to look pretty.

Turkey Tenderloins

Reviewed: Mar. 11, 2008
This was so easy, moist and tasty! My five year-old loved it! I marinated the turkey for four hours and then grilled instead of broiling, but that was the only modification I made to the recipe. I would definitely make again - especially for company!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Mar. 5, 2008
These cookies were a big hit when I made them according to the recipe, but they were out of this world when I made them again using chocolate pudding and Hershey's Special Dark chocolate chips. Incredible!

Four Egg Yellow Cake

Reviewed: Feb. 24, 2008
I made this cake for my daughter's birthday and followed the recipe exactly. It took a little longer than 45 minutes to bake but looked great when done. I had to cut out some of the cake to decorate it, and the kids and I devoured the scraps - delicious! Unfortunately, because of time constraints, I had to make and frost the cake two days ahead of time, so by the time we actually got around to eating it at the party, it tasted a bit drier than when it first came out of the oven. However, it still received rave reviews.

Almond-Crusted Tilapia

Reviewed: Feb. 22, 2008
Tilapia is about the only fish I can get my family to eat, and up until now, our favorite recipe has been the Broiled Tilapia Parmesan on the AllRecipes site. However, my husband thinks this tilapia is even better! I used packaged Italian Parmesan flavored almonds and a freshly grated three-cheese blend. I also substituted garlic salt for the garlic pepper since I have never seen the latter in my grocery store. The previous reviewer mentioned that the almond mixture didn't go far enough, so I used 1-1/2 cups of almonds and 1-1/2 cups of cheese for five fillets. (I have no idea how much each one weighed.) It was barely enough! I had to end up increasing the flour, too, and I should have used three eggs because my last fillet was barely moistened. The end result was wonderful, though. This recipe is a keeper!

Baked Potato Soup I

Reviewed: Feb. 20, 2008
Couldn't stop eating this soup! I substituted leftover ham for the bacon and added more salt and pepper for my taste. I grew frustrated waiting for the soup to thicken, so I threw in the potatoes and onions while the base was still somewhat thin, but the starch from the potatoes seemed to help it thicken faster. Would definitely make again.

Glazed Ham

Reviewed: Feb. 18, 2008
Terrific! Although I started the temp at 275 as directed in the recipe, I eventually raised it to 375 to bake another dish and then lowered it to 350 to bake yet another dish. The ham still turned out moist and delicious! I was a little skeptical about how much flavor the ham would absorb from the sauce, but it turned out perfectly - mildly smoky and sweet. Since other reviewers compained about the sweetness, I was prepared for something like a Heavenly Ham, but it was definitely not THAT sweet! Can't wait to serve this at our next family holiday gathering!

Grandmother's Buttermilk Cornbread

Reviewed: Feb. 11, 2008
Although I have still not found a recipe that surpasses restaurant cornbread, this one comes pretty darn close! It is definitely the best cornbread I have ever made. Although many reviewers found it too sweet, my family loved it (especially the kids). I left my husband in charge of pulling it out of the oven, and he took it out exactly at 30 minutes. The middle was still a tad gummy, but the outside was perfect! In fact, I'm afraid the edges might have turned out a bit dry if he left it in any longer. Guess I'll just have to make it again to experiment....
