Easy Banana Bread

One of the best banana breads I've tasted! Unlike some banana breads that don't become moist until they've sat around for a couple days, this one is moist straight from the oven. Oh, and no crack on top during baking! I was too lazy to use my mixer and just stirred the batter by hand (used butter-flavored shortening and melted it first), and it came out great!

Chicken Suiza Cornbread Bake

Because of temporary dietary restrictions, I had to make this casserole somewhat bland -- no onions, garlic or chiles. However, it still tasted quite good. The bottom is basically a Thanksgiving corn casserole. I can't wait to try the recipe again with the spicier ingredients. I think I might try mixing in a can of flavored diced tomatoes with the chicken.

Strawberry Nut Bread

The batter for this recipe is extremely thick, so use only firm strawberries and stir gently so as not to crush the berries and turn the bread pink. Although tasty, the bread was not quite what I had hoped for. I'm going to try a recipe I found in the paper that calls for butter and milk -- perhaps it will be a lighter, fluffier consistency.

Chicken Tetrazzini IV

Delicious! Instead of cream, I used 1% milk, and I found I had to broil the casserole to brown the top. My husband thought the recipe was a little bland except for the cheese topping, so next time I will add some parmesan to the white sauce.

Yellow Squash Casserole

I started baking this casserole at a lower temp because I had something else in the oven but then increased to 400 later -- took a little longer than 25 minutes, of course, but still turned out beautifully. A delicious way to eat squash!

Chicken Enchiladas II

I had to make a number of substitutions in this recipe -- cream of chicken soup instead of mushroom, garlic salt instead of powder, and chives instead of onions and chiles. It was a very tasty recipe, and I will make it again.

Baked Sesame Chicken

My family loves the sweet sesame chicken that you get at Chinese restaurants, so I mixed about 1/3 cup duck sauce with the soy sauce before dredging in the sesame seed/flour mixture. (The stickiness made the chicken really hard to coat.) The chicken came out nice and tender and had a pretty good flavor, but it's not anything like the restaurant chicken.

Sunflower Oatmeal Cookies

I made these cookies to use up a bag of sunflower seeds I had purchased for another recipe. Usually my family dislikes nuts and seeds, but they loved these cookies! Next time I may try adding raisins, as suggested, or some other type of dried fruit.

Orange Cream Fruit Salad

Very tasty, but I would prefer more pudding texture -- I used 1 c. milk but will reduce even further next time since the fruit gets juicier as it sits. Also, I recommend cutting up the peaches into bite-sized pieces.

Banana Banana Bread

I only had 5 overripe bananas, which I think was a little less than the recipe called for, but the texture was perfect -- ultra-moist, but not gooey! It was thoroughly baked at 65 minutes. Next time I will follow some of the other suggestions for enhancing the flavor, such as adding vanilla.

Boston Brown Bread I

I was disappointed with this recipe. The texture was typical of low-fat bread -- very chewy -- and the molasses flavor was overly strong. Also, the bread began to burn on the outside after 45 minutes in the oven but was still not completely cooked in the middle.

White Chocolate Macadamia Nut Cookies III

These cookies were supposed to be for my daughter's school, but they were sooooo good that I couldn't stop eating them straight from the oven! I used 1/3 c. of butter-flavored Crisco in a stick plus 2/3 c. butter, and the cookies kept a nice shape. I also used the Pampered Chef small cookie scoop, which made 5 dozen. 10 minutes was perfect for the cooking time, and the almond extract added a great flavor! All in all, a delicious and easy recipe!

Salisbury Steak

Chocolate Chocolate Chip Muffins

I did not have a chance to read the reviews on this recipe before I tried it.... For me, the recipe made 15 muffins, and they were very dry. I was afraid 20 minutes was too long to bake them, but it sounds like others experienced the same problem. I tried storing the muffins overnight in a closed container with cupcakes, but it didn't help moisten them up. My family liked the chocolate taste, but not the crumbly mess.

Mouse's Macaroni and Cheese

Wow -- this recipe had way more than a dash of black pepper! The texture and cheesiness were terrific, so I will definitely make again, but I would suggest salt (not listed) and pepper to taste. I found it easier to double the recipe to use a full box of noodles and an entire stick of butter.
