Blueberry Zucchini Bread

It was Great!!! I used 3 loaf pan's instead of 4 mini. Sooooo Yummy with Coffee or warm topped with Vanilla Ice Cream.

Baked Zucchini Squares

I used the Exact same Recipe.But I did have to bake a additional 25 Minute's for it to be a Nice golden brown.It was light and so simple to make.My family Loved it!!!! will make again and again!!

Pasta Bean Soup

This was a Great Simple soup to make.I used Organic Chicken Broth and The can's of Tomato I used had Basil & Oregno with the Diced Tom's.I also used more Spinich and It also was Organic plus someBlack Pepper.My Family Loved it and it was done in less than 30 minute's!!!Will be Making this soup year round!!!

Corned Beef and Cabbage

Overall The Corned Beef was Moist & Great But Not Pleased with how Soft & Mushy the Cabbage was. I Think Next Time I will add The Cabbage the Last Hour of Cooking.

Brazilian Fish Stew

This was AMAZING & So Simple!! I Used Frozen Tilapia & Frozen Shrimp. It was a "What Do I have in The Freezer to Cook up Fast Day". I found this recipe & made a Couple Changes. I added one Red Pepper & Half a Green Pepper & Only Half a Yellow Onion . I Juiced 2 Lemon's & Marinated my still FROZEN Fish & I Quickly thawed out the Shrimp took the tail's off added the Seasoning's Covered it & put in the Fridge for 20 Minute's then Followed the direction's. It was Amazing & It did not have a Strong Fish Taste. The Flavors really Complimented one another GREAT!! will make this again & again. I added some Sliced Avacados & served with Rice & warm Tortillas.
