Key Lime Cheesecakes with Raspberry Swirls

This is a great recipe! I didn't have key limes, so I added the juice of a quarter of a lemon and some zest too. I did not use paper liners. I just used non-stick spray before cooking, then cooled in the refrigerator overnight. Then I ran a sharp knife around the egde of each and put them in the freezer for about an hour. They came right out.

Cinnamon Coffee Frosting

I am only giving this recipe four stars because of the consistency. The taste is fantastic. It is too runny though. I dissolved my coffee in the vanilla and did not use all of the milk called for. Mine still came out a little too soft.

Cajun-Style Eggs Benedict

I made the sauce described in this recipe this weekend to eat over an andoille hash with poached eggs. While the sauce was easy and smooth, it was a little bland. I put a lot more than a dash of hot sauce and it still needed a little something else.

Smoked Chile Cole Slaw

I made this for a bbq this weekend. I tripled the sauce (calculated to 12 servings) and it was just enough for two bags of pre-shredded cabbage and carrots. I made the dressing the night before, then just added it to the dry ingredients a couple hours before serving. Easy and delicious. Spicy, but not too spicy.

Jalapeno Chicken

I made this for a bbq this weekend. It was a perfect recipe for getting all of the work done the night before. I made and applied the rub to boneless chicken breasts, then poured in half of the sauce as a marinade over night. The next day I grilled the chicken, using the other half of the sauce for basting. Everybody raved about it.

Fried Mozzarella Cheese Sticks

These were tasty, but they did not hold their form. Perhaps I should have coated them twice, like some other reviewers suggest. I just followed the recipe and they were melted and stuck to each other.

Buffalo Chicken Wings III

I didn't think these were anything special. The baking made for wings that were not particularly tender or juicy. The sauce was tasty, but the consistency was runny, so it did not coat the wings very well. I won't make them again.

Key Lime Pie VIII

Easy and delicious! Everybody raves about this when I make it. I use a graham cracker crust, which is super easy to make, just crushed graham crackers and some melted butter. I get key limes, which are available at Trader Joe's if you have one near by. I use my garlic press to juice them. One bag of key limes makes a little less than a cup, but it turns out great. Be careful not to put too much zest in though because it will make it a little bitter.

Fresh Mozzarella Pasta Salad

This is a great salad. I added the juice of about half a lemon. It definitely needed a little something extra. The salad is easy to make, looks great and tastes great. Agree with other reviewers that it should be served relatively fresh, as the basil will stop looking fresh after a day or so.

Grandmother's Buttermilk Cornbread

Great cornbread. I added some frozen corn to my batter before baking and it made for a nice authentic consistency. Also, make sure to use butter to grease your pan. I used shortening the first time I made this recipe and it really interfered with the taste.

Sloppy Joes II

Perfect recipe, would not change a thing. I doubled the recipe and it was enough for about 8 sandwiches (not 12). I served them with tater tots for a football game, the meal was a huge hit. I have made them with beef and ground turkey. Both were great, so go with turkey if you want to make it a tad healthier.

Angel Food Cake III

My first attempt at angel food cake and it came out perfect! I was making a flag cake for July 4th, so I used a 9x13 pan, baked for about 35 minutes. It came out perfectly golden. I didn't have cake flour, so I just used all-pupose flour, but reduced by about 2 tablespoons. Thanks for such a fool-proof and delicious recipe!
