Hummus III

A good, easy recipe - but I double the garlic. Sometimes I roast half a red pepper and add it in, too. Very flexible. Makes a ton, so be prepared to freeze half of it unless you eat hummus at an insane rate!

Baked Potato Skins

Wow. I've made baked potato skins before - the basic concept isn't hard. But this recipe really kicks it to the next level. The brush of oil with paprika etc gives it a wonderful flavor.

Authentic Enchiladas Verdes

These were absolutely FANTASTIC, and even better the next day as leftovers. We did a batch and a half of the sauce and only used 3 peppers in the batch, but probably could've done one more. It was pleasantly spicy but not overwhelming. We also dipped, rolled, and baked and sauteed some onions for inside, as that's how we're used to loving enchiladas. The sauce is wonderful!

Bacon and Feta Stuffed Chicken Breast

Surprisingly delicious, and I had my doubts! Does need a bit of salt, and next time I think I'll try added spinach. The tomatoes really do have a lot of flavor, and the chicken is moist and tender.

Bread Machine Thin Crust Pizza Dough

Fast, easy, delicious. We only use about 3/4 the yeast when we want a crispier crust - it's great either way! Love how easy it makes pizza!

Thai Green Curry Chicken

We absolutely loved this green curry chicken (our first green curry!), but did find it to be a little too sweet and not spicy enough. The latter is probably related to our curry paste - we just don't have options around here, so we take what we can get. In the future, we'll cut the sugar entirely (I'd cut it some already for my diabetic husband - we think the coconut milk is plenty sweet enough! Delicious!) and season with black pepper and cayenne to give it the kick the paste is missing. We also, on the advice of a friend, added veggies to this recipe, which was a GREAT choice. I just threw in eggplant, snow peas in the pod, and red bell pepper when I did the green onions. Really added a variety, and they went WONDERFULLY. Served over Jasmine Rice.

Super-Delicious Zuppa Toscana

My whole family was dubious about this one - too much sausage! What on earth is kale? (I subbed it in for spinach) - but it was an indisputable hit. Every single person LOVED it. Absolutely delicious.

Slow-Cooker Chicken Tortilla Soup

We swapped pinto beans for the corn, because my husband doesn't care for corn, and used bagged tortilla chips. Also just chopped the chicken into small spoon-sized pieces and let it cook in the slow cooker - did it on high for 4 hours rather than low for 8, and it turned out WONDERFULLY. It was super easy to make - took me maybe 15 minute before church on a Sunday, and we came home to a mouth-watering aroma. Will definitely make often!

Surprisingly easy to make, very little fuss for an absolutely amazingly delicious bread. We used it for caprese sandwiches, and they were WONDERFUL. Will make regularly.

Chicken Pot Pie IX

Excellent. Very forgiving of mistakes. Check out the reviews for tips - like brushing your crusts with egg, prebaking the bottom crust, and adding garlic. Basically as long as you make a delicious gravy, it's hard to screw this up.

Kabob Marinade

We love this marinade and make kabobs using it all the time in summer! I've yet to feed them to someone who doesn't adore them. We use it on chicken and steak in equal measure, and both are delicious!

World's Best Scones! From Scotland to the Savoy to the U.S.

I wanted some scones that were more British than American, and this recipe absolutely hit the spot! They were a big hit with my friends, who remarked 'Wow, and I don't even like scones!' I took the advice of other commenters and grated the butter (to handle it less) and also refrigerated the mixture between portions of the recipe. I also added a handful of frozen blueberries, and they were pop-in-your-mouth delicious!

Baked Potato Soup V

I love this soup! I've made it with low-fat yogurt in place of the sour cream to cut calories, and I don't bother with whole milk. I also am way too lazy to scoop the insides of the potatoes out, so I just chop them bite-sized with the skins on and dump in - it's delicious!

Pesto Chicken Florentine

I made this for my mother, a notoriously picky eater, who wasn't thrilled at the concept. She came in the house and admitted, 'that smells good'. Then she came over and allowed 'that looks good'. Then we sat down to the table and I looked over at her to ask 'so? How is it?' Let's just say it will be going into the rotation in our extremely picky household. Very simple to make, and the Knorr's alfredo sauce (1 pkg) I used was surprisingly good! Will probably triple or even quadruple the spinach next time.

Chicken Tikka Masala

Really fantastic, although I agree with everyone who says that 1 or possibly 2 tsp of salt in the whole thing is PLENTY. I also cut the cayenne in half because I didn't want it terribly spicey, and it still had plenty of heat - I'll probably cut it a bit more the next time I make it. I didn't want to mess with the grill, so I took a review's advice and cooked it in the oven at 475 while I let the sauce reduce. Really great flavor, surprisingly simple to make! I suspect you could skip the hour marinating time and just coat the meat in the yogurt mixture because it's so thick. This is my first attempt at Indian and it came out wonderfully!
