Chuck's Favorite Mac and Cheese

wow! this recipe requires a lot of cheese! i got to watch how much i consume but i cant help it because its so darn good! i didnt have cottage cheese, so i threw in some random cheese i had in my fridge (cream cheese and gouda). still turned out great! i actually melted the cheeses together then pour the sauce into the pasta, then throw it in the oven! cuts back baking time. oh after baking, i actually scooped the mac and cheese into wontons in a muffin tin to make mac and cheese wontons! pretty neat combo! :)

Honey Walnut Shrimp

honey walnut shrimp has always been a favorite of mine at restaurants. but now i can make my very own! EVEN BETTER than some restaurants. thank you for sharing! i didnt have walnuts, so i candied pecans instead (as in my picture) but it was still yummmy!!!!

Korean Soft Tofu Stew (Soon Du Bu Jigae)

this is a good basic recipe for soon du bu but i just made some changes to make it more authentic :) first, its all about the broth! I bought dried anchovies (take out the intestine/gut whatever) into a pot with water the garlic, onion, shitake mushrooms and dried kelp! Bring up to a boil for 5 mins on high, then an extra 15-20 mins on low. Then remove the shitake mushrooms and chop them up into small pieces. Then using your clay pot whatever you're using, could be a large sauce pan, with cooking oil, cook the beef with the korean chili powder. Once the beef is almost brown, add the korean fremented chili paste and the shitake mushrooms. Add the broth into the sauce pan (avoid picking up the anchovies, onion, and garlic :) ). Add the soft tofu. Add a teaspoon of fish sauce (or whatever to your liking, this can be omitted) Once it starts boiling, add the crack egg. Add a teaspoon of seseme oil! it gives a great smell and makes the soup a little more tasty!

Crab Ceviche

great recipe ! i usually like the ceviche made with pescado (fish) or shrimp but this is actually a lot easier. i love layering it on a tostada and add a little of tapatio for an extra kick!

Groovie Smoothie

im loving this smoothie! perfect for summer nights. i actually unpeeled the bananas and put bananas and fresh strawberries in the freezer overnight, then blend it all together in the morning for breakfast! also sprinkle some granola or half smoothie and half granola for a breakfest treat :)

Pesto Sauce

easy recipe! i never knew pesto was so easy to make. i actually used this sauce for my caprese salad. however, i used chopped walnuts and almonds. i toasted both and then put them in a ziplock bag and used a rolling pin the pound it into small pieces! i will definitely use this recipe again :)
