Almond-Topped Fish

I loved this recipe! The only thing I changed was to use sour cream instead of mayo and I used tilapia. I was hesitant after reading some of the negative reviews, but don't let that deter you...everyone has different tastes. My boyfriend made me promise to make this again, and he's picky when it comes to eating fish.

Indiana-Style Fried Cabbage

I loved this! We have cabbage usually once a week, so I was looking for something different. I used fresh mushrooms and sauteed everything in some bacon fat then added store-bought bacon bits. I didn't use any butter and didn't think the dish was missing it. We had this with some pork tenderloin for a delicious low calorie, low carb meal!

Sangria! Sangria!

I didn't follow this recipe exactly, more like I used it as a guideline, with great results! I used the lemonade concentrate, orange juice, and triple sec as a base. For everything else I just used what I had, lambrusco (not a dry red), chardonnay (to make up for the sweet red), and Yukon Jack instead of brandy (that's just what I had). I didn't add any additional sugar, but it didn't need it! I added a splash of seltzer water to each glass when served. It was a big hit!!

Fried Cabbage II

YUM!!! This was so good, we had it as the main course! I used a whole pound of bacon, just over half a head of cabbage, and added some garlic powder. WOW!! I will definitely be making this again! I almost didn't add the sugar, but I'm glad I did! The vinegar was a very nice touch to lighten it up a bit too!

Tricia's Pineapple Cheese Casserole

I used Cheez-its for the crust on top, and WOW!! I haven't tried this with the plain crackers, and I don't think I have to! I was pleasantly surprised by the combo of flavors...salty, buttery, sweet. I will definitely be making this over and over!

Roasted Beets with Goat Cheese and Walnuts

This was sooooo good!! I didn't have walnut oil so I used olive oil, and no champagne vinegar so I subbed balsamic. I can only imagine that those differences would make it better, but this was spectacular anyway!

Breaded Brussels Sprouts

I made this exactly as the recipe says, except I used a parmesan garlic butter spread I have. This was an awesome way to do something different with Brussels Sprouts! We have them at least once every other week, so I needed a little shake up...and this was exactly it!

Cake Mix Cookies I

These are awesome! There are so many combinations for this! I tried yellow and chocolate cake mixes. The yellow cake was softer and puffy where the chocolate was somewhat flat.

Crackers a la Yvette

I have made this a few times, the first as written except with about 3 times as much crushed red pepper (we like it spicy). Since then I've used Chex cereal instead of and in combination with the oyster crackers, both with success. My one suggestion is let this sit for at least a few days before serving. The spice of the ranch and pepper takes at least that long to blend and absorb into the crackers or cereal.

Bacon and Bourbon Thanksgiving Stuffing

I LOVE bourbon, bacon, and rye bread so this was perfect. If you don't like one of those things, then don't even try this! The flavors actually go really well together, and nothing overpowers anything else.

Pumpkin Fluff Dip

Yum, yum, yum!! I made this for a holiday party and it was a big hit! I doubled the pumpkin and used cheesecake pudding, but it was very tasty! We had leftovers that didn't fit in the pumpkin "bowl" and they lasted for a week just fine.

Ditalini Salad with Black Beans, Corn, Lime, Cotija Cheese and Avocado

OUTSTANDING!!! I didn't change anything from the recipe except I couldn't find cotijo cheese so I had to sub feta. This was outstanding! We added some pre-cooked and diced chicken breasts and made it a meal! I will absolutely be making this again, won't change a thing!

Roasted Spaghetti Squash with Asparagus and Goat Cheese

I was looking for something different to do with spaghetti squash, and I'm so glad I tried this! The texture difference the asparagus adds was very nice. However, the flavor was absolutely amazing fo rbeing so simple! I followed this recipe exactly as written. The goat cheese added a nice touch!

Slow Cooker Zucchini Soup

I used ground venison instead of sausage, that's just what I had. I added some extra Italian seasoning and crushed red pepper to accommodate the flavor. I used fresh tomatoes instead of canned and fresh garlic instead of powder, again I just had them around to use. This was a very hearty and robust soup, it filled up both my husband and me with enough leftovers for another meal! The flavors blend together very well! I would definitely make this again!

These were so easy and tasty!! I used bacon instead of sausage, but can't wait to try this with different variations! I had no problems with the filling spilling over, but I used a baking pan with the square cups.
