All Day Apple Butter

Wonderful flavor; made the whole house smell great. I cut the sugar down and ended up cooking about 30 hours all told, the last 6 with the lid off, to get everything very nice and dark and delish. Added about 1/4 cup of brandy at the very end before packing into jars and canning, which gave it a lovely deep "grownup" flavor.

Onion Cheese Bread

Fantastic and very simple to make! My whole family loved it. I halved the recipe, baked it in an 8" pie pan and used fresh parsley instead of dried. After baking for 15 minutes, sprinkled the top with reserved parsley and cheese and gave it another 5 minutes. My two sons already want to know when we can have it again!

Spinach Beef Bake

The whole family enjoyed this, even with changes to accommodate what we had on hand. I used hot Italian sausage instead of ground beef, substituted fresh mushrooms, added a can of tomatoes and precooked the rice. Plus I eliminated the mozzarella and I don't think anyone missed it. It was ready to go after only 30 minutes in the oven. Yummy! Looking forward to leftovers for lunch today.

Braised Balsamic Chicken

This had a great flavor; the whole family enjoyed it. We added about 1/2 lb. of sliced fresh mushrooms to round it out, and they soaked up the sauce really nicely. Quick, easy, healthful and tasty... a winner all the way around. Thanks!

Crumb-Coated Chicken Thighs

Super-simple and delicious! I used panko bread crumbs and they stayed in place nicely. Another time I might try brushing the chicken with an egg-mustard wash just to keep it moist and boost the flavor even more. Either way, this was a great dish and my whole family enjoyed it.

Chicken Spaghetti II

Quick and Easy Monkey Bread

I took a hint from some of the other reviewers here and did the following: *substituted 2 cans of refrigerated biscuits for the frozen rolls *combined sugars, pudding, cinnamon, walnuts and butter--plus added a splash of vanilla *cut biscuits in eighths, rolled in mixture and arranged in 13x9 pan The result was delicious! I brought it to a moms' group potluck and it was one of the first dishes to disappear. Several people even asked for the recipe. Thanks for this tasty, easy-to-make contribution!

Slow-Cooker Chicken Tortilla Soup

Everybody loved this--my 5YO and 7YO sons went back for seconds, as did my husband. I used taco sauce instead of enchilada sauce and it worked out fine. Thanks for sharing this easy, tasty recipe.

Stove Top Tamale Pie

Great base for an easy, tasty family meal! I added a can of green chiles and used a can of Southwestern-style beans; I also added a couple teaspoons of chili powder. My husband and sons loved it and even went back for seconds! This one's going into regular rotation--a great way to use ingredients we always have on hand.

Easy Turkey Curry

Good basis for a recipe--nice way to use up leftovers. I omitted the mushrooms (Sweetie doesn't like them), doubled the onion, added about 1-1/2 c. frozen petite peas, tripled the curry powder (the add'l turmeric gave it a nice golden color) and put in some red pepper flakes for spice. Generously salted/peppered the rice too. Everyone (Sweetie, 4YO and 6YO sons and me) ate it up. Thanks!

Cabbage Roll Casserole

I think this recipe as written would have been fairly bland, but I followed a few of the other suggestions here and came up with a result that even my 3YO and 5YO sons loved. First, I browned the beef and onion together, then added the shredded cabbage and a *lot* of minced garlic and sauteed for a few more minutes. Instead of tomato sauce, I used one can of tomato soup and one of diced tomatoes with basil, garlic and oregano. I also added a packet of onion soup mix and used seasoned salt instead of regular salt. I used only one pound of beef and a single head of cabbage, so I reduced the broth to 3 cups(honestly, if I had used any more, it wouldn't have fit in a 9x13 pan). This casserole was a success--thanks!

Gerry's Chicken Enchiladas

Absolutely delicious... time-consuming, yes, but rich, flavorful and extremely popular at my house! I made a couple of meatless enchiladas filled with just plain refried beans for my vegetarian sons and tucked them into the baking pan alongside the other enchiladas. The delectable sauce infused even these plain-jane versions with spicy flavor... and of course, the "real thing" with braised shredded chicken was even better! My husband said these were better than my mom's enchiladas, which is the highest praise imaginable. :)

Hot and Sour Slaw

Simple and excellent flavor. I made a couple of substitutions, including using shredded spinach instead of bok choy and chili-garlic sauce instead of chili paste and minced garlic. (It was what I had on hand.) My dinner guests enjoyed it very much and agreed that spinach might even be better than bok choy (my husband, though, wasn't a huge fan... he has very tender taste buds and I might reduce the heat for his portion next time). I served it with Indonesian Chicken Satay, another recipe I found here, and got excellent reviews all around. Thanks for a delicious and unusual salad creation!

Indonesian Satay

Wonderful! This recipe was simple to prepare and garnered rave reviews from our dinner guests. No hard-to-find ingredients or complicated cooking procedures, just pure and simple deliciousness. I did slightly increase the amount of peanut butter in the sauce, and next time I make it I will probably also increase the onion slightly as well. I served this with plain steamed rice and Hot-and-Sour Slaw (you can find the recipe here)... all in all, a wonderful Indonesian-inspired meal.
