Olive Chicken II

Ok this was the most amazing tasting chicken ever. We used chicken thigh and cut it up into small 1 inch chunks. We marinated it in extra virgin olive oil and olives. Then we sauteed it along with some tomatoes, onions all the spices and chili peppers(We like it really hot). And then added some wine. Didn't even add the chicken broth. Yummy tender chicken. One of the best I have had. Thanks for the recipe.....This one is gonna be a regular for us from now on.

Banana Nut Oatmeal

Yummo! I eat oatmeal fro breakfast everyday, and this is gonna be one of my regular. I used old fashioned oats. I cooked the oats first for about 10 mins with half regular milk and half water. Then in the last 5 mins I added the rest of the ingredients. I used some honey ( maybe 1 tbls) and about 3 tbls brown sugar for 1.5 cups of oats so it was not very sweet. Also I added a pinch of salt. And it turned out awesome. My husband liked it too. I did grind the flax seeds and added about 3 tbls of it, as it is healthy. Well as I said it turned out yummy and not too sweet. And it will be a regular breakfast for me.

Whole Wheat and Honey Pizza Dough

Awesome recipe. I really really wanted to have a pizza and a healthy one too. So as I was looking for a whole wheat pizza dough recipe I came across this one. Too good to be true. I made it today and hubby was literally licking the plate clean. The only change I made in the recipe was, that I added a about 3-4 tbls of semolina flour to make it a crispy. It turned out absolutely yummy. As others have suggested I pre-baked the crust for about 10 mins at 350 ( I rolled my crust pretty thin. Also After rolling the pizza I let it rest and let it rise a little bit. Topped it with my home made spicy tomato sauce. Sprinkled on some veggies and a little bit of cheese and put it back in the oven for another 15 mins. And oh my god, the crust tasted like heaven. So much better than the one made with all purpose flour. My crust was not soggy, in fact the bottom was pretty crispy. It might be because of the semolina flour. Also I baked it on a baking sheet, covered with foil and oiled with olive oil. Guilt free pizza. Thanks for the recipe.

Chocolate Cornstarch Pudding

Oh my god! Absolutely yummy pudding. I have never before tried a box chocolate pudding, though I have used cornstarch vanilla pudding out of box before. But I never thought it would be so easy. As another reviewer suggested I used brown sugar and it really tasted like caramel chocolate. I skipped the margarine and didn't miss it. Also I like my pudding creamy so I reduced the cornstarch to just about 2.5 Tbls. It still was a little clumpy on cooling so I think next time I am gonna make it 2 Tbls. Also I added about 3 0z chocolate chopped to the pudding when it was hot. I give it 4 stars because with 1/4th cup cornstarch its gonna become a pudding cake. And I don't think pudding should be that thick. But otherwise its an awesome recipe. Best chocolate pudding every. I am even planning on trying out vanilla pudding next time.

Black Magic Cake

Just a clarification the cake can use both dutch processed and regular cocoa becoz it has baking soda and buttermilk. Either ll give similar results. The reason cake is falling in middle might b the oven temp. Or if you use a very big pan without heating core. Try it with a heating core or a flower nail, it wont fall in the middle. Also you can use paper towels soaked in cold water and the wrung and folded and covered with aluminum foil. Use this to line the outside of the pans. This ll also help a lot. The cake falls in the middle if the edges get heated faster than the center, so if u use cake pan liners, it ll help. Also type of man ll make a huge difference too.

Chocolate Banana Layer Cake

I made this for my hubby on his birthday and he loved it. The cake itself is awesome. It came out moist and tender. I took out 1 star for frosting because I didn't like its tangy taste. But this was the first time I had ever tasted cream cheese frosting.So it might just be me. So I added a little bit of melted chocolate and some more sugar to the frosting to make it more sweet. Also a TIP for adding bananas. Layer them just before you eat. Also don't leave the cake outside for long. Otherwise the bananas leave water and the layers will slide. Mine did the same thing. And I kind of didn't like the flavor of the softened bananas. Next time I think I ll add the banana cut up fresh while serving. But overall a very good tasting cake. Thanks Bakerbee and Aunt Lu :D
