Unbaked Chocolate Oatmeal Cookies

Wow, these are so good! I followed reviews and threw in an extra "handful" of oatmeal. Don't know if I would've had to, but I did...also,I only had 3 tbsp of cocoa, so I used that and then threw in some chocolate chips. They are plenty sweet, but sooooo good. I just made them as directed and they are firming up fine. I haven't had to refridgerate or anything.

Homesteader Cornbread

Best cornbread EVER!!! I just threw all the ingredients in a bowl, mixed it up, and baked it in a greased pan. Simple and tastes SO GOOD!

Fluffy Biscuits

This recipe was amazing! SO fluffy and light!!! My confession; in my haste to get supper on the table, I neglected to the read the directions. I dumped all the ingredients in the bowl, beat them with my electric hand mixer, scooped them with an ice cream scoop (an idea from another reviewer on this site!). I also threw some oregano, basil, rosemary, and parmesan cheese into the batter. I guess to sum up....if a recipe can withstand my negligence and bizarre time-saving methods, I say it's worth keeping!

Pumpkin Chip Bread

I was really impressed with this bread. It wasn't phenomenal right out of the oven, but the next day there was more flavor, (subtle, but tasty!) and it stays so moist! The only changes I made were; adding additional pumpkin, leaving out the cloves, and baking a full recipe in 1 loaf pan. I also skipped the glaze, although I'm sure that would be even better!

The Best Fresh Tomato Salsa

We have had a difficult time finding a salsa recipe that we like, but this recipe was AWESOME! We've made several batches and canned them. The only thing we changed was that we used lemon juice instead of lime, since that's what we had on hand.

Grandma's Sloppy Joes

I'm picky about sloppy joes, but these were excellent! I used a pepper blend that I froze with peppers from our garden last summer. (Blend of green, banana, and jalepeno peppers) and skipped the cloves, since my husband's not a fan of the taste. We both thought these were really good and I'm saving the recipe!!!

Grilled Garlic Parmesan Zucchini

AWESOME recipe!!! We were blessed with an abundance of zuchinni in our garden this summer, and I was so glad to find another way to use them! Very tasty, and a quick addition to any meal, since most of the time I cheated and used garlic powder, Kraft parmesan cheese, and dried parsley.

Cornmeal Hotcakes

These were good...nice quick, simple recipe. I didn't have buttermilk, so I took a chance and just put in the same amount of regular milk. Added a little additional flour to make the batter thicker. I'm sure they would've been better if I had made them like the recipe says, but it's good to know that it worked this way too.

Pineapple Chicken Tenders

This was great!!! I scaled the recipe down to 5 servings, and marinated 4 chicken breasts for about 4 hours...then grilled them and served them with a salad. The chicken was so flavorful, and didn't take long to make...so I'm definitely keeping this recipe!

Creamy Chicken Bake

I never have broccoli soup on hand, and my husband hates mushrooms. BUT...the recipe sounded really good to me, so I skipped the mushrooms and substitued a can of mushroom soup....both problems solved. Served it with biscuits and veggies, (we put the sauce over the biscuits!) Making it for the second time tonight. :)
