Actually Delicious Turkey Burgers

HOLY SHIZBALLS!!! These was utterly delicious. I can't believe how tasty and filling these burgers were, and absurdly easy to make. NOM.

Mouth-Watering Stuffed Mushrooms

Darn fine. 1 recipe for the stuffing is enough for 24 mushrooms though. And definitely add the bread crumbs and/or lump crab meat. Dipping each mushroom in melted butter is also a great idea.

Sweet Potato and Hazelnut Mashed Potatoes

GAH! So tasty, and SO SIMPLE. We didn't have hazelnuts, but walnuts were just as delicious I'm sure. And the apple cider is a PERFECT complement! YUM.

Garbanzo Bean Salad

PERFECT. Light yet filling, and absolutely delicious. Easy on the onions, heavy on the apple, and don't be shy with the honey! Great as is, or put it on some toasted whole wheat bread and make a sandwich.

Mediterranean Linguine with Basil and Tomatoes

I might cut the red pepper flakes in half, but mostly because the kiddos were a little sensitive to it. Otherwise, it's PERFECT. So fresh, so delicious. Totally worth the tediousness of cutting up grape tomatoes. =)

Baked Coconut Shrimp

Outrageously good. 7 minutes in the oven, flip'm over, 7 more minutes and perfect. We didn't even bother with dipping sauce they were so flavorful. But next time I'm going to try the "coconut in the food processor" suggestion, as the texture was a little... off.

The recipe as is gives a milder flavor. If you want it sweeter, add more powdered sugar. But I think it's perfect as is.

They might have been good, but by the time I got up from my nap to eat the fruits of my labor, they were already gone. I added some semisweet chocolate chips and dried cranberries (a favorite combination of mine) and they lasted all of 30 minutes. The husband and kiddos had sucked them down like they were the antidote.

I am SO impressed with this recipe. It's remarkably elegant flavor for so simple a recipe. It's also my first experience with dill weed that didn't make me want to immediately chug a glass of Jameson.

Cranberry Nut Bread II

Absolutely glorious. Probably one of the best recipes I've pulled off this website. Even my picky eater stepminion gobbled it up, and the kid hates nuts in bread like they're Voldemort. Don't worry about the amounts of the cranberries, walnuts, or zest-- I went super heavy on all 3, but it's a matter of taste of course. Something tells me it's pretty hard to screw this one up.

Want the same amazing flavor and consistency but with a whooooole lot less fat? Substitute 1 cup of the oil for a cup of unsweetened applesauce. (That's a trick I learned from others on this fab site.) No effect on the outcome except to reduce the calories by a monster factor. I found cook time to be an hour. Absolutely delicious. AMAZING consistency. Just perfect.
