Basic Quiche by Shelly

Fantastic recipe. A few tweaks though-- lose half a cup of the cream, and add an extra egg, or it's a bit too light. I throw in a little chopped ham and some sauteed onions too to jazz it up a bit.

Linguine Pasta with Shrimp and Tomatoes

Reviewed: Jul. 27, 2010
The husband and I both loved the dish, even using half fresh tomatoes and half canned. Next time I'll lay off the cajun seasoning-- overall it was a bit salty, but with excellent potential after a little tweaking.

Waikiki Meatballs

A GREAT recipe. Am looking forward to trying slight variations (including the baking technique) but just as it is, it was a BIG HIT at our dinner table. Even the 7 year old ate it, and that's saying something at our house...

Scallop Stir-Fry

Not sure what, but it needed something else. A good base, but not quite complete on its own. Would suggest playing around with this recipe a little.

Apricot Pork Chops

Reviewed: Oct. 27, 2010
PERFECT, just as is. Lovely taste, and quite possibly the easiest recipe I've ever seen for a dinner entree. So long as you like a good blend of sweet and savory, you will LOVE this recipe. And seriously, it's soooo easy...

Lemon Blueberry Bread

Delicious, and fun to make! I'm no kitchen pro, but even a newbie like me couldn't screw this up. Made it for a brunch I hosted, and it was by far the favorite dish on the table.

Quick Savory Cranberry Glazed Pork Loin Roast

Reviewed: Oct. 29, 2010
A huge hit with my little ones, one of whom is a maddeningly picky eater. Easy, delicious, a great blend of flavors. Cook time seemed right on as well.

Honeyed Pork Chops

Reviewed: Nov. 1, 2010
Very tasty, but the cook time was way off, especially if you fried them even briefly. I pulled them out of the oven after 40 minutes, and they were dangerously close to dry. Flavor was great-- poured extra heavy on the honey, and I tried half soy sauce and half teriyaki like another reviewer suggested and they came out beautifully. Next time I'll fry for just a couple minutes on each side to seal in juices, then yank out of the oven after 30 - 35 minutes.

Chicken Marsala

Reviewed: Nov. 19, 2010
Delicious! I added a quarter cup of heavy whipping cream to the sauce to thicken it a bit, but otherwise I wouldn't change a thing!

Pumpkin Bread IV

Reviewed: Nov. 20, 2010
Want the same amazing flavor and consistency but with a whooooole lot less fat? Substitute 1 cup of the oil for a cup of unsweetened applesauce. (That's a trick I learned from others on this fab site.) No effect on the outcome except to reduce the calories by a monster factor. I found cook time to be an hour. Absolutely delicious. AMAZING consistency. Just perfect.

Old Fashioned Brown Gravy

Reviewed: Nov. 25, 2010
We forgot to make gravy (again) this year for Thanksgiving, so I did a search for easy last minute gravy recipes. This recipe came out beautifully, and I did my very best to screw it up at each turn! You can't go wrong with it. Totally good stuff.

GORGEOUS. The cloves really make it. And you can't screw this up no matter HOW hard you try.

Sour Cherry Pie

1 of the most idiot proof recipes I've ever seen. Very tasty, and great consistency as long as you don't mind the texture of the tapioca pearls (but you can totally grind those down anyway if you like.)

Mouth-Watering Stuffed Mushrooms

Reviewed: Jan. 2, 2011
Darn fine. 1 recipe for the stuffing is enough for 24 mushrooms though. And definitely add the bread crumbs and/or lump crab meat. Dipping each mushroom in melted butter is also a great idea.

GAH! So tasty, and SO SIMPLE. We didn't have hazelnuts, but walnuts were just as delicious I'm sure. And the apple cider is a PERFECT complement! YUM.

Garbanzo Bean Salad

PERFECT. Light yet filling, and absolutely delicious. Easy on the onions, heavy on the apple, and don't be shy with the honey! Great as is, or put it on some toasted whole wheat bread and make a sandwich.

Mediterranean Linguine with Basil and Tomatoes

Reviewed: Mar. 20, 2011
I might cut the red pepper flakes in half, but mostly because the kiddos were a little sensitive to it. Otherwise, it's PERFECT. So fresh, so delicious. Totally worth the tediousness of cutting up grape tomatoes. =)

Slow Cooker Chicken Stroganoff

Reviewed: Apr. 11, 2011
Delicious as is, but I think I agree with the other reviewers who added a bit of white wine at the beginning. It was wonderfully warm and filling as is, but a little thinning might be a good thing in warmer climates (like ours.) But you can't beat the flavor with a stick! Awesome meal, either way.
