Pork Roast with Thyme

My favorite recipes are the ones it's impossible to screw up. For example, I forgot that my oven is antediluvian and cooks things about 100 degrees hotter than its setting, but this recipe STILL came out delicious. I also didn't notice that the vinegar I poured all over my roast had expired in 2009. Still came out delicious. I used minced garlic instead of slices, and I was worried that the flavor would be unevenly distributed. And yet Husband stopped shoving the meat into his mouth only long enough in between bites to moan about how amazing the roast had come out. Watch the cook time (as that fluctuates with most large cuts of meat,) baste periodically, and this dish will come out beautifully.

Vegetarian Korma

Solid base. Forget the cream, replace it with a can of coconut milk. Definitely play around with the seasoning-- whoever suggested the cumin, turmeric, cinnamon, nutmeg, coriander, cloves combo was GENIUS. I halved the jalapeno so my 9 year old wouldn't freak out, and it still had a great flavor you could feel on your tongue after the meal was over. Also tossed in some mushrooms in the last 10 minutes. Next time, RAISINS! I used baby Dutch potatoes, quartered them, and STILL found them a little firm, so adding the coconut milk right away might not be a bad idea to cook them fully. The flavor is fantastic, and it's a warm and wonderfully filling dish even without meat in it (but my 11 year old requests chicken next time.)

Quick and Easy Chicken Noodle Soup

An awesome base recipe. I've never made chicken noodle soup before (and I'm not exactly Martha Stewart in the kitchen) but I used this for reference, and added/subtracted/substituted as I went along, and the end result was delicious. Who knew canned chicken was so useful?

Veggie Lasagna

A VERY cool dish, but I think I might wanna name it something different (casserole, maybe?) It's a great blend of flavors, and even my pickiest stepminion enjoyed it. Don't skimp on the cheese or seasoning though. Also, fresh carrots work just as well as frozen.

Jo-Ann's Power Bars

They might have been good, but by the time I got up from my nap to eat the fruits of my labor, they were already gone. I added some semisweet chocolate chips and dried cranberries (a favorite combination of mine) and they lasted all of 30 minutes. The husband and kiddos had sucked them down like they were the antidote.

Caprese Burger

The flavor is great, and I'm looking forward to trying the author's suggestion of store bought pesto in place of parm/garlic/basil. As is, it's a little mild. I probably would have thrown a few basil leaves on top of the burgers if I'd had any leftover, but they were still delicious.

Chuck's Favorite Mac and Cheese

A good base recipe. Kiddos loved it as is. The suggestions about adding milk were spot on-- definitely needed moisture. I'm also looking forward to adding more varied cheeses, and possibly a dash of cayenne. But it was lovely just as it was (with the milk, I mean.)

Honey Mustard Grilled Chicken

SOLID recipe, and believe me, we tried as hard as we could to screw it up. We couldn't keep the grill lit, and after an hour of trying, we finally just stuck'm in the oven for about 45 minutes. Still delicious!

Rich and Creamy Tomato Basil Soup

DANG. That is some tasty soup. But, and I realize I'm going wildly against consensus here, I could have done with just a little less fat. I made it with the full amounts of butter and cream, and you know, maybe just a little less of one or the other (maybe both?) might have made it a little less heavy. I was uncomfortably full after a bowl. But it was deeeee-licious for sure.

Easy and Elegant Pork Tenderloin

The other reviews got it down. It's a great starter recipe, but needs a little "oomph" thrown in. Season it however you like, but definitely add some herbs and spices, or a marinade of some sort.

GREAT flavor! Yeah, the oil can be cut back to taste, and I like a lesser bean-to-corn ratio, so I only used to cans of beans and a full can of corn. But it's awesome as is.
