Banana Crumb Muffins

This really is one of THE BEST banana muffin recipes out there BUT don't follow the advice of some reviewers to wait until the last five minutes of baking time to add the topping. I did this and when I pulled them out to put on the topping they had already "mounded" and weren't sticky enough on the top to hold the topping in place. It all just rolled off onto the muffin pan. So, follow the original recipe and just put it on in the beginning. I did swap out the butter for 1/3 cup oil like reviewers suggested, and added cinnamon, vanilla, and a touch of nutmeg to the batter for added flavor. I also use silicon muffin liners and they pulled out of them perfectly without splitting or falling apart. GREAT recipe. In the words of my five year old daughter "These are SO DELICIOUS! MMMMMM"

Janet's Rich Banana Bread

Very moist but held form nicely. Has a nice brown crust. I blended the bananas in with the wet ingredients before I added the flour. No sticky banana chunks in my bread! :) This is one that will slice nicely for a brunch or buffet...

Pierogies

Relatively easy to make and really yummy. I think the key is in the potatoes. I added onion powder and cheddar cheese and garlic to the potatoes for flavor. I also added about a 1/2 tsp. salt to the dough. If you are short on time, make about 4 massive calzone size pierogies! :o) Doing it that way also helps to not overwork the dough. YUM!

Butter Brickle Frozen Delight

This was A-MA-ZING! I made it in a 9X13 and followed the recipe exactly. (Small addition was some salt on the oat crumbles while still hot out of the oven). I brought it to our 4th of July swim party and expected to bring quite a bit home b/c it was so rich. NOPE! Brought home a clean dish instead. Everyone raved over it... YUM! I think I am going to do this around the holidays but mix in an apple pie filling mix into the cream cheese filling and add some cinnamon and nutmeg to the oatmeal crumbles. :)

The Best Rolled Sugar Cookies

This is my "go to" recipe for sugar cookies and I KNOW my sugar cookies. :) I make and decorate them professionally. I have probably made this recipe 50 times and it NEVER fails. I read a review of someone who said it was too "Cakey". Just bake at a slightly higher temp. and it should have more bite to it. You can't go wrong if you follow this recipe. Also, yes, it makes a very large batch so if you only need a couple dozen make sure to half it. (But it freezes will if you wrap it in plastic wrap and flatten it into a freezer bag, so might as well make it all and freeze leftovers for next time!)

Best Big, Fat, Chewy Chocolate Chip Cookie

Yes Yes Yes... I have been on an 8 year search to find a chocolate chip cookie that my husband deems worthy of being compared to Paradise Bakery's CC Cookie. Well, I think we finally found it. (Thank God! lol) DO put all the chocolate chips in. It's a lot but that's why this recipe is called the "BEST" big, fat, chewy, yada yada yada... Make sure to pull them out at the point when you think they just might fall apart if you take them off the sheet. That way when they cool they aren't too crunchy and they melt in your mouth. YUM!

Five Minute Ice Cream

GREAT for a last minute cold dessert! I didn't have heavy cream so I used some of my french vanilla half and half. Worked nicely... throw in a dark chocolate hershey's bar at the end! YUMMMM!

All American Apple Pie

Soooo good. My husband and I ate a piece of this every night for three nights in a row, with butter pecan ice cream on the side. I was sad when it was gone. lol. The only downside is that I missed the "butter" flavor in the crust and could kind of taste the veg. oil. But, I really liked being able to do a pie with a homemade crust without making a flour-y mess!

Scalloped Potatoes II

Good basic recipe but lacked a little flavor. I would add some cheddar cheese and some chopped green onions next time. Maybe some sprinkles of onion powder if I didn't have real onions. Overall, a great way to use up the bag of potatoes sitting on my pantry floor!

Oatmeal Pancakes II

I used 1% milk on these so I can't give the most "honest" review of the recipe since it calls for buttermilk. BUT, that being said, I really thought this was a great basic recipe for healthy pancakes. I added cinnamon and raisins and substituted 1/2 of the flour with whole wheat flour. I would triple the recipe if you have a few kids and want any leftovers! I snacked on the leftovers straight out of the fridge and they were yummy.

Chicken Crunch

Good stuff... I added a can of sliced potatoes on top of the chicken and some cheddar cheese between the soup and crackers. Also put some garlic and onion powder in the soup for flavor. It was a great way to use up the other half of my rotisserie chicken from last nights dinner! Wish I had some frozen peas to throw in it though...

Blueberry Crumb Bars

So, I followed other reviews and did 1/2 brown sugar and 1/2 white. Also used a cup of butter rather than shortening. Some were saying that it was too crumbly and I was serving to a standing crowd so needed them to not make a mess... I added one cup of quick cooking oats (and only used 2 1/2 cups flour) and they stayed together well. I also like the taste of oats in a bar like this! Really yummy. The blueberry layer was thick and delicious, but on the messy side. Serve with napkins. I have three toddlers and wouldn't let them near these! Overall, a fresh taste, not too rich.

Chocolate Cherry Chip Cake

I thought this cake was extremely moist and flavorful. I did make my own frosting with b/c I can't imagine a buttercream with 4 cups of powd. sugar to only one stick of butter. The recipe is exactly the same as the one listed, except you use 2 cups powd. sugar and only 1 tablespoon vanilla. It's plenty sweet and delicious on this cake.

Potato Pancakes II

I should have read the reviews before I cooked these...I was misled by the high number of stars. I wish I would have known to add flour or bisquick b/c without it these fall apart in the pan. My "pancakes" looked more like scrambled eggs!
