Exquisite Pizza Sauce

Spicy Italian Pork Cutlets

I really liked the flavors together although I did use a bit of cornstarch with my chicken broth to thicken the sauce a bit more. I used the fresh tomatoes of summer and it was great.

Instant Yeast Rolls

I made these tonight to go with pasta and added a bit of garlic powder to the mix. I did allow them to set for a bit but they did not rise measurably. Even though they are still a very good biscuit. They are tender and with the added butter flavorful. They won't make it to my regular rotation but when in a pinch for time I can see making them again. I too added the butter to the mix and then brushed with a bit more melted butter when they came out.

Pecan Dijon Chicken

Very good. I had been looking for a recipe to use up some pecans that I had left over when I found this recipe; I was skeptical about this while I was making it and took others' advice and added a bit of cornstarch to thicken the sauce. I did not have dry mustard but other than that followed the recipe and it really was good. It was not too sweet and I really loved the chopped nuts as did my husband who usually shys away from recipes with dijon mustard. This one is worth making again. I would actually give it a 4 1/2 because it is not the best ever but it is much better than average and could be served to company.

Easy Fruited Chicken Salad

This is better than your average chicken salad recipe and my husband loved it. I had my doubts about it because of the fruit and apple pie spice but it was good enough that I will make it again. I did use light mayonnaise instead of the full fat variety and I seasoned my chicken breast before cooking them.

Campbell's® Easy Chicken and Cheese Enchiladas

Good basic recipe. I made this with cream of jalapeno soup instead of the cream of chicken, I added 1/2 packet of taco mix instead of the chili powder, warmed corn tortillas placed the chicken then added 1 teaspoon of the sauce mixture instead of mixing them. Much easier to roll up that way. Topped with the remaining sauce and cheese. Baked for 30 minutes. Added refried beans, rice, and guacamole and it made for a lovely dinner.

Best Ever Popcorn Balls

This is a great recipe in its simplicity.The only thing I would note is it is worth it to try to pick out the unpopped kernals before you make and add the syrup. It is not any fun to chop down on one of those!

Caramel Apples

My daughter and I made these for the 1st time tonight and they turned out well. We washed and dried the apples, chilled them, and used sturdy plastic forks for handles. We used a 4 cup pyrex measuring cup to melt the caramels in and allowed it to set for 5 minutes before dipping the apples. They aren't beautiful but they aren't horrible either. With a little practice they would be pretty in addition to yummy.

Chicken Parmigiana

I follosed the recipe and used seasoned bread crumbs, a good quality sauce but to be honest it was only ok. I would have thought with such a high rating that it would be great. It could be a good recipe for a weeknight dinner when you are busy with other things as it does not require lots of attention.

Marshmallow Treats

This is such a classic. I like to use marshmallow peeps to make them too. Pumpkins at Halloween give you an orange treat, pint at Easter, etc...

Italian Breaded Pork Chops

I made this tonight and used the rack method and the chops turned out wonderfully. I had to omit the cheese as I was out and added about a tablespoon of ranch dressing mix to the bread crumbs. I also dredged in flour before the egg mixture as someone had previously suggested. I will be using this method from now on.
