Beets on the Grill
My husband is in love with doing beets on the grill now. Since I had two softball sized beets I ended up cutting them into huge chunks and I added some chopped peeled carrots. I'm not a huge fan of beets but I even had to say these were pretty good! I just made sure I kept flipping the packet so they wouldn't burn. Next time I might try adding some of the different herbs as other reviewers have stated.

Fresh Asparagus Soup
I made this tonight only subbing the vegetable broth for chicken stock and used 1% milk vs soy milk and added a little minced garlic. Served this with a grilled ham and swiss sandwich and it made a very filling meal. My children even thought it was delicious. I only gave the recipe 4 stars because I did sub some ingredients and I think that made the difference. As written I only give it 4. With the changes definitely a 5.

Corn Fritters
So yummy!!! The words of my children. I would have given them 5 stars however, I read through the comments and took some of the advice to use 1/4 cup of stugar and a little more salt than it stated. This made them perfect! If I had stuck to the original amounts I know we wouldn't have like them as well. I did use frozen corn because that's all I had. I didn't warm it and drain it any just stuck in frozen, mixed, added a touch more flour and then started frying. They were perfect. Fluffy and tender on the inside while being golden and crunchy on the outside. Next time I think I will lower the temp on the oil they did get a little too brown. This basic recipe I think could be so versatile from spices and veggies you add to make it savory, to adding fruit and more sugar for a delicious fried sweet.
