Mini Meatloaves

I am ALWAYS looking for a new meatloaf recipe and let me just say, I will look no more!!! This is the best meatloaf I have ever eaten! It's the perfect balance of sweet and meaty. I did what another viewer did and baked it in a muffin pan and ended up with 11 minis. I also need to say that my husband is really the cook of the house. He's terrific. He took one bite, looked at me and said "This is REALLY good". He wouldn't stop commenting on it.

Waikiki Cornbread

Sooo delicious! So easy and quick. I wasn't sure what buttermilk baking mix was so I used bisquick. Also, note that the recipe serves 15! Thats a lot of cornbread. I halved mine and baked it in a 8 x8 glass dish. It's a keeper!!!!

Delicious Ham and Potato Soup

I followed this recipe exactly and it turned out fantastic!! I have 4 boys (okay 3 boys plus one man) that are hard to please. Everyone scarfed up the soup and I heard quite a bit of MMMMMmmmmms :)

Chocolate Ganache

Quick, easy and delicious. I used this for cupcake filling. The key was to let it sit until completely cooled before attempting to whip it to a frosting. I put it in a pastry bag with the appropriate tip and filled each cupcake perfectly. It was a huge hit! Anyone can make!

Red Velvet Cupcakes

I made these cupcakes for a surprise bday party. I followed the recipe exactly including the cream cheese frosting. I wanted to have something in the middle though so I found a ganache recipe on this site and filled the cupcakes with chocolate ganache before frosting. To top them off I addeded some red sugar crystals for decoration. With no exaggeration, people were raving about the cupcakes and many said they were the best cupcake they ever had! I definitely think the ganache was an added surprise everyone loved.

Peanut Butter Brownies II

I'm still trying to come down from my sugar high! This was the perfect balance of chocolate and peanut butter. My husband wanted pb brownies with vanilla ice cream and this recipe defintely did not disappoint. I didn't have chocolate chips so I omitted them; And I only had one pkg of cream cheese. Other than that I stuck to the recipe and it was perfect!
