Carrot Cake III

Best carrot cake I have ever had. I made it the first time as is, then the next time made two changes. First I used half brown sugar, half regular and I honestly couldn't tell the difference. Then I cut down on the powdered sugar in the icing the second time because it is REALLY sweet and takes away from the cake.

Sushi-Inspired Tuna Salad

As is, this recipe is great. I have also used soy sauce, rice vinegar, sugar, shrimp sauce....And I've thrown in cucumber, carrot, avocado, and anything else that I put into sushi rolls. All around, this recipe is good 'as is' or if you want more. It's just perfect, and I use it a couple times a month. You've gotta at least give it a shot.

Best Chocolate Chip Cookies

These are wonderful! They really are crunchy on the outside, thick and chewy on the inside! There's only one thing about the recipe I DON'T understand. WHERE did the yield of 4 dozen come from? I got 9 dozen from one batch. Exactly how massive do people make these cookies to only get 4 dozen?

Eggy Doodle Sandwiches

My son & husband LOVED this as is. I however do not like ham and need less calories. I just used reg toast, one slice of cheese & replaced the ham with a tomato slice on mine. :) I also used "I can't believe it's not butter" spray instead of actual butter. yummy! not hard to reduce the calories here if you think it's too much. you also don't have to eat the whole thing, simple as that.

Dark Chocolate Brownies

These are so yummy! They firm up after they cool and are so rich. Be sure to have a big glass of milk close by you'll need it. Best Brownies ever.

Spam Musubi

I made these & took them to a get together with friends. Immediately our host perked up and was like "Is this Musubi?!?!?!" and started chowing down on them. Afterwards he asked me if I had steamed it, and then let me know that many Hawaiian natives steam them to tighten the seaweed. Will do next time, but he sat there all night telling stories about when he lived in Hawaii. Must have been close & it tasted pretty awesome too.

White Chocolate Macadamia Nut Cookies II

These are wonderful! 12 minutes to the perfect white chocolate macadamia nut cookies! I made the recipe as is except I just dumped the whole bag of white chocolate chips in. My husband, who usually has amazing self control when it comes to cookies, inhaled the first 2 dozen that came out of the oven. The recipe says that it yields 3 dozen cookies, but I got 7 dozen out of it. The cookies will look....not quite done, let them sit for a bit & then once the next batch of cookies come out of the oven, THEN switch them to a wire rack to cool. they lets them set up enough, but not overcook. Anything over 12 minutes made my cookies on the crispy side. not burnt, just crispy. Enjoy!

Grilled Chicken Burgers

I really liked these. I had to use a lot more bread crumbs than the recipe called for, but I loved all the veggies in the burger. Very good and I will make these for myself and freeze the patties for when my husband gets in the mood to grill. He wasn't really fond of them, but he's not a huge chicken fan.

Delicious Ham and Potato Soup

Ground Chicken Gumbo

Simply a wonderful Gumbo. It's not spicy to the point where you need something to drink after a couple of bites, but enough for a slight kick. We are okra lovers so we used 3 cups instead of one. My husband never wants to eat left overs unless it's from one of 3 meals. This is one of those three. The best part is, it's pretty healthy besides the sodium content.

Too Much Chocolate Cake

Spaghetti Tacos

Who would have thought? These are really good! I haven't made spaghetti in over 5 years because of having it so much when I was younger, but these made me suck it up and make the forbidden food. My husband and I have decided that we may have these once every few months. I made this 'as is' the first day. For the left overs, I added hamburger & sausage and they were amazing.

Addictive Sweet Potato Burritos

These are wonderful. beans & sweet potatoes are healthy and these burritos have a sweet taste with a kick. I baked them for about 30 minutes for a crispier shell. I tried them with kidney beans, but because I'm not a huge fan of kidney beans and STILL thought they were great, I gave them another go with 2 cans of pinto with jalapenos and 1 can of northern beans. Perfect! I always have to try the recipe 'as is' before changing it, and I'm glad I didn't turn these down just because they sounded weird.

Chunky Monkey Pancakes

WOW! these are amazing. will use less chocolate chips next time, but wow. my anti-pancake husband went back for a second one (only made 4 instead of 8-9 with the full batter amount). used blueberry syrup, but not very much as these pancakes are sweet enough as it is. wonderful recipe!

Peppered Shrimp Alfredo

wow! this is AMAZING! I've been trying a lot of new recipes lately & this one is going into our monthly menu box. i forgot to add the salt & pepper, but that's perfectly fine, it was wonderful without it. has a nice zing to it because of the cayenne pepper, so i would add less if you don't like spicy food. wonderful recipe & everyone should give it a try!

Pretzel Turtles

You're going to need a lot more rollos, pretzels, and pecans! These are so good & are gone in the blink of an eye at any gathering. They do take a while to cool, so be sure to have a space ready in your fridge or freezer for them & make them at least 24-48 hours in advance.

Favorite Bundt Cake

I use this recipe all of the time (Got it from my grandma in law), except instead of water I use milk. Have fun with it, mix up the cake mixes, pudding, and flavored chips. You just can't go wrong. Love it!

Seafood Sandwich

Pretty good little sandwich. I put it on fresh sandwich rolls from the local bakery and baked it at 350* for 10 minutes to give it a nice crunch & some warmth. It was really good for so few ingredients!
