Summer Tomato Salad

Oh, yum! These powerful flavors are still exploding in my mouth. I didn’t have yellow tomatoes, but oh well...it was still amazing. Also, I used a tiny bit of finely chopped white onion instead of green onion.

Spinach Enchiladas

Yum...these are way better than any other spinach enchiladas I’ve made before. I used 1/2 a white onion instead of green and cottage cheese instead of ricotta. Next time I’ll use a tiny bit if cream cheese instead of ricotta and I’ll use queso instead of enchilada sauce. They won’t need as much cheese inside with the queso on top (too sloppy). They are going to be awesome!!!

Homemade Black Bean Veggie Burgers

De-freaking-licious and super healthy! I loved these burgers. They’re super easy and super cheap. The only problem I have is that I only made 1 batch. Next time I will make more and freeze them. I made my own beans instead of using canned. Next time I will either strain the chopped onions and peppers or I will add an extra egg. I’d like them to be a little firmer. Also, I will add a touch less cumin and chili powder and maybe throw in an additional seasoning. I also want to explore replacing the bread crumbs with maybe oats or something else. I baked them 10 minutes on each side, then another 5 minutes on the 1st side and that was great.

Black Bean Spinach Pizza

Kevin loved it! I thought it could use a little work, but not much. We used a chipotle salsa and next time I would add a little more. And I could add more veggies if I wanted.

California Grilled Veggie Sandwich

This sandwich is incredible. I did just a couple things to make it my own. I don't have a grill, so I broiled the veggies. I sprinkled a "no chicken" bouillon cube over the veggies and mixed it around with the olive oil. For the feta, I chose a tomato basil feta. For the focaccia, I chose a tomato focaccia from Albertsons that is wonderful. I will make this time and time again. My family loved it.

Mexican Bean Salad

Very good. I didn't have any corn, so I had to go without. I will make sure not to skip it next time because it sounds great. The overall flavor was wonderful. This took longer than the recipe claimed since there was so much chopping, but it was sooo worth it.

Avocado Tacos

Awesome. I took the advice of other reviews and made them my own. I added a little Joe T Garcia's salsa and some leftover Spicy Black Bean Salad. This took 5 minutes from beginning to end...mmmm.

Mock Tuna Salad

I wish I could give this 10 stars. I love this recipe. I made a huge batch this time, using about 2/3 a pound of garbanzo beans. I soaked and cooked them myself. I put the garbanzo beans in the food processor first until they are very smooth, then I build the rest. I added 4 stalks of celery and half of a white onion instead of green onions. It did taste quite a bit like tuna salad and was as easy as it gets and super cheap!!!

Artichoke Spinach Lasagna

Oh my goodness. This will be added to my list of staples. Everyone in my house, including friends and family, loved this lasagna. I made it with the no-bake noodles, which was a mistake, but I only have myself to blame for that one. They got too done (soggy). The pasta sauce with the spinach and artichoke was genius. Also the feta was awesome. I used a sun dried tomato feta because that's what was available at my local store. It was great, and I would imagine any flavored feta would rock.

Vegan Sun-Dried Tomato Pesto

Really good, but could be even better. Next time I will use only 1 clove of garlic and 5 tbs pine nuts. I didn’t have any sun-dried tomatoes so I used roasted red peppers, which was also good. Either would work well. I will make more next time. This only yeilded 1 1/2 servings. I guess I like a lot on my pasta!

Tomato-Cornbread Salad with Avocado and Cilantro

Yum. This was so unique, delicious and healthy. It was a very exciting mix of flavors. Next time I will do one tiny thing different to make this even better for my tastes...add a pepper of some sort to spice things up. I love spicy. The cornbread would offset the spicy. Make sure you listen to the direction about mixing the cornbread in 10 minutes before you serve it...no more, no less.

Ham Breakfast Braid

Wow! This is amazing...simple and delicious. I did not put milk and cream cheese in the eggs, but sauteed an onion in the pan before I cooked the eggs. It was awesome and perhaps a bit healthier. I highly recommend this. It made breakfast fun.

This is great! Spicy but great. I honestly don't think it tastes much like sloppy joe's but I am certainly not complaining! It somehow reminds my of a shrimp curry dish my dad made when I was a kid.

Chicken Pot Pie IX

This was delicious! I usually take the easy route on pot pie and use a cream of potato for the base, but this was sooo much better...buttery goodness. I love knowing that there aren't preservatives too.

Corn Dog Casserole

Excellent! I made it with vegetarian Italian Sausage (Morningstar), which worked well. I really don't think it tasted like corn dogs, but that might be because I made it vegetarian...? The dish was extremely moist. In fact, maybe it could have used a few more minutes in the oven, but I thought the moisture made it even better. After reading the other posts, next time I'll play with it a little, using muffin pans and adding creamed corn and less milk.

Mom's Zucchini Bread

Good, but I think it needs twice the zucchini and about half the amount of sugar and half the amount of cinnamon. I will try it with the apple sauce that is so recommended by other people.

Broccoli Pie

This could be great, but needs a little work. Next time, I will sauté the onions first and add more seasoning. Also, I cooked it for 40 minutes and it was not enough. Next time, I might make it a bit smaller and add a bit less milk. Potatoes and sautéed mushrooms would have been a nice addition. This is a great base for many combinations. Can’t wait to try it again.

Vegetarian Stuffed Poblano Peppers

Luckily I added a little more seasoning to the stuffing before I stuffed them. The final product was pretty good, but I tasted the "meat" before I gave it some extra seasoning and didn't care for it.
