I love to cook! I never spent much time trying until I went vegetarian in 2007. That forced me to play around in the kitchen and start getting creative so I didn't live on bean burritos and french fries!!!
My favorite things to cook
For the most part I'm a very healthy eater, so I'm always looking for recipes with whole foods and things that incorporate raw or nearly raw foods. I love veggies!
My favorite family cooking traditions
I love to experiment with the recipes I grew up with. They became part of who I am, so since most of them are anything but vegetarian, I had to get inventive if I ever wanted to taste those amazing flavors far I've adapted my mom's Shepherd's Pie, my mom's Chicken Picatta, my dad's lasagna, my ex's mom's Chicken 'n Dumplings and much more. My dad's Shrimp Curry is next on the list. I've gotten nothing but positive feedback on my adaptations so far!!! Another fav of my mom's that needs not "vegetarianizing" is the best chocolate cake on the planet!

Summer Tomato Salad
Oh, yum! These powerful flavors are still exploding in my mouth. I didn’t have yellow tomatoes, but oh was still amazing. Also, I used a tiny bit of finely chopped white onion instead of green onion.

Vegan Sun-Dried Tomato Pesto
Really good, but could be even better. Next time I will use only 1 clove of garlic and 5 tbs pine nuts. I didn’t have any sun-dried tomatoes so I used roasted red peppers, which was also good. Either would work well. I will make more next time. This only yeilded 1 1/2 servings. I guess I like a lot on my pasta!

Mock Tuna Salad
I wish I could give this 10 stars. I love this recipe. I made a huge batch this time, using about 2/3 a pound of garbanzo beans. I soaked and cooked them myself. I put the garbanzo beans in the food processor first until they are very smooth, then I build the rest. I added 4 stalks of celery and half of a white onion instead of green onions. It did taste quite a bit like tuna salad and was as easy as it gets and super cheap!!!
