About this Cook
I watched my mom bake up a storm as a kid and she always made breakfast on weekends (pancakes, waffles, Swedish pancakes...from scratch!) I had made drop cookies in 6th grade with success, but that was it for awhile. I was a fan of the microwave until I started to put on weight. Finally, I met my partner who is a great cook. He encouraged me the most.

I am more of a cold salad maker than a cook (Aegean chicken salad, tuna salad, egg salad, etc.)

Salsa De Tomatillo
Oh yum! I added 1/4 C. more cilantro and 1/4 fresh parsley. I also added one large red bell pepper (chopped) to tone down some of the fieriness of the salsa for my non-spice lovers. It makes a combo of a little sweet with a spicy bite :)

Avocado, Tomato and Mango Salsa
I made this for a party this past weekend. For those who like sweet, this is the salsa for you.My GF's loved it! For those who like it a little spicier, I suggest adding about 1/2 to a full Tbsp of Sriacha or Chalula to kick up the fire. Also, I added some parsley and black pepper. I may also make the recipe again with either 1/2 the mango or no mango. The avocado served as a nice binding ingredient and made it buttery. This was great served with Stacey's Pita Chips (Multi Grain).

Aegean Chicken Salad
Kelly: Very scrumptious (as is). I made this for my boyfriend (who's a great cook) with the following modifications/suggestions: -2 small breasts of chicken (cooked and shredded) -3 cloves of garlic (small), quartered and sliced -1/2 cup European cucumber, quartered and sliced -1/4 Tsp. Accent -1/4 Tsp. salt -1/4 Tsp. ground black pepper Topped with cayenne pepper (a dash) This is a hearty, healthy chicken salad served on sprouted dill bread with yellow tomato slices and a handful of Spring Mix. I loved the Kalamata olive flavor. Good work Kelly! Enjoy!
