Oregon Salmon Patties

Great recipe, I'll be holding onto this one. I didn't use any reserved salmon juice, and I used 10 oz instead of 14.75 but left the other measurements the same. I added a teaspoon of Old Bay. Mixture was wet to work with, and I baked it at 375 for about 10 mins per side (because I refrigerated the patties for a half hour or so before baking). I served it with mashed potatoes and topped it with mayo that I mixed with sriracha. Great stuff - husband loved it!!

Mushrooms with a Soy Sauce Glaze

This recipe is amazing! I sliced the mushrooms pretty thin and sauteed them in a mix of butter and olive oil before adding the garlic and soy sauce. I also didn't end up adding any black pepper. I served it with the Baked Teriyaki Chicken, another recipe from this site. I will make these mushrooms again and again!! Thanks for sharing!

Lite Carrot Cake

This was a great recipe! Following other people's suggestions, I used 2 full teaspoons of cinnamon. I also used 2 c whole wheat flour, instead of using cake flour, and I used skim lactose free milk instead of buttermilk - and it still turned out great! It's not sweet and cake-y, but I don't like when carrot cake is really sweet. I ate it without even frosting it. Thanks for posting!

Oatmeal Raisin Cookies I

This turned out great! I halved the recipe and added 1/4 c extra flour and about 1/4 tsp b. powder, but judging by how well they kept their shape, I'm not sure I needed it. I also added chocolate chips instead of raisins and cooked them on 350. One tip for people who were having problems: if you grease the baking sheet, the cookies will spread while cooking!! make sure it is ungreased! Thanks for posting, I will definitely keep this recipe around!

Best Marinara Sauce Yet

Applesauce Bread I

This was wonderful! I halved the recipe, using 2 eggs, and I didn't add raisins or anything else as an add-in. Everyone loved this bread. Thick, moist bread, best for dessert or brunch.

Ultimate Shrimp Scampi

Okay, I needed something to make the last meal before I go grocery shopping for the week, so I cooked this up. I had to leave out the parsley, Worcestershire sauce, and wine because my sister is such a picky eater and I didn't have any wine on hand, but it was STILL absolutely amazing! I didn't add avocado or cheese to my plate and it was still awesome. Very simple and light, which I loved since I don't usually care for pasta sauce. Thank you for posting!!

Cappuccino Muffins

These were a huge hit with my family! I actually left out the instant coffee grounds because I didn't have any on hand, but they still had a great flavor that goes great with milk or a morning cup of coffee. Thank you for sharing!

Butter Chickpea Curry

This was awesome!! I didn't want to mess with cooking the potatoes separately, so I cut up broccoli and added that instead. I doubled the amount of chickpeas and added some water to make more sauce, then let it simmer til it reduced a little. Wonderful! I'll be adding this to my regular rotation!!

Cheater's Enchiladas

I really liked this recipe, but to be fair I changed a lot. My family doesn't like olives, so I took those out, and I added a mixture of rotel, refried beans, and green chiles (one can each total) to each layer to bulk it up. It was a great, easy vegetarian meal.

Easy, Cheesy Tortellini Bake

This turned out great and my whole family loved it! I used about 29 oz total of tortellini, and I I estimated the cheese but probably used 1/2 c mozarella and a Tbs or two of parmesan. I'll add this to the regular rotation!

Grilled Onion Bloom

I was looking for a side dish to grill with Italian sausage and pork chops, and this turned out great. I mixed all the herbs into the butter and then brushed that over the onion before grilling. This went great with the grilled meats!!
