About this Cook
I'm a grad student about to start teaching and writing my dissertation, so cooking is my favorite escape from daily responsibilities!
My favorite things to cook
Making bread is my stress reliever of choice. I'm currently working on perfecting Spanish bread - I studied in southern Spain and the bread is the thing I miss the most!
My favorite family cooking traditions
My mom was born and raised in Cuba, and she and my grandmother are the ones who taught me to cook! They also granted me access to my great-grandmother's recipe notecards, which means I have a lot of traditional Cuban dishes up my sleeve, and a lot that I still have to learn!
My cooking triumphs
1) My family's intensive arroz con pollo recipe; 2) A garden fresh ratatouille.
My cooking tragedies
Here's my confession: I have never successfully made pie! Once, I severely overcooked a pecan pie, which subsequently spilled over onto the bottom of my oven and smoked the entire time. Another time, a pumpkin pie was so burnt on the crust that it was inedible. I haven't given up though!

Oregon Salmon Patties
Great recipe, I'll be holding onto this one. I didn't use any reserved salmon juice, and I used 10 oz instead of 14.75 but left the other measurements the same. I added a teaspoon of Old Bay. Mixture was wet to work with, and I baked it at 375 for about 10 mins per side (because I refrigerated the patties for a half hour or so before baking). I served it with mashed potatoes and topped it with mayo that I mixed with sriracha. Great stuff - husband loved it!!

Mushrooms with a Soy Sauce Glaze
This recipe is amazing! I sliced the mushrooms pretty thin and sauteed them in a mix of butter and olive oil before adding the garlic and soy sauce. I also didn't end up adding any black pepper. I served it with the Baked Teriyaki Chicken, another recipe from this site. I will make these mushrooms again and again!! Thanks for sharing!

Lite Carrot Cake
This was a great recipe! Following other people's suggestions, I used 2 full teaspoons of cinnamon. I also used 2 c whole wheat flour, instead of using cake flour, and I used skim lactose free milk instead of buttermilk - and it still turned out great! It's not sweet and cake-y, but I don't like when carrot cake is really sweet. I ate it without even frosting it. Thanks for posting!
