I grew up in Kentucky eating greasy, fattening (but delicious), southern-style cooking. I've been vegan since 2007 and I love transforming the foods I grew up on into healthier, cruelty-free versions. I work as a corporate liaison for a non profit animal welfare organization.
My favorite things to cook
I absolutely adore entertaining and cooking vegan meals. From healthy stir frys to deep frying everything. You name it, I'll veganize it.
My favorite family cooking traditions
Before making the healthy, happy switch to a vegan diet, I grew up eating greasy, fatty, delicious southern foods. I learned to cook from my mom and now enjoy veganizing all of my former favorites, like chicken & dumplings and sausage gravy over biscuits.

Best Ever Blueberry Cobbler
To make this vegan (aka awesome), I used applesauce instead of the egg and it came out perfect! There is plenty of room for adjustments to your liking too... lemon zest, cinnamon, etc. I'll definitely use this recipe again.

Vegan Crepes
These are fantastic. They were still hard to flip without tearing after letting the mix sit for 2 hours, but I tried again after letting it sit for 4 hours and that made a big difference = the longer it sits, the easier it is to work with. The texture was just a tiny bit off, compared to crepes made with eggs, and it seems like they had to be a little bit thicker to keep from falling apart. But overall, I was very impressed with these. Next time I'd sub a little whole wheat or buckwheat flour to make them healthier.

Oven Roasted Red Potatoes
Simple, quick & tasty! Next time around I'll break the onions up a little first. I'll definitely be making these again.
