Refrigerator Pickles

Very crisp pickles and easy. Cut sugar to a cup and left out the bell pepper. First time I made it I used 1t of salt and found it a little flat. Just upped the salt to 1 1/2t on my second batch.

Easy Mint Chocolate Chip Ice Cream

Delicious! Everyone loved it. I pulsed my mini chips in the food processor to make the chips a little less uniform. Love having fine chocolate shavings and chunks in my ice cream. The only thing stopping me from giving it a 5 star rating was it could have used a little more mint extract, maybe another 1/8th teaspoon. Will definitely make again but am going to increase the mint extract. Love it.

Fresh Broccoli Salad

Delicious. Subbed dried cranberries for the raisins since I don't like raisins. Subbed balsamic for the white wine in order to reduce the amt of sugar in the recipe. Decreased sugar to about 1/3 of a cup and next time would probably decrease it to 1/4 cup. Tasted great the first day but was too sweet on the second. Will definitely be making again.

Classic Caramel Corn

Rhubarb Jam

Chocolate Velvet Ice Cream

Absolutely delicious!!! Pumped up the cocoa powder a little bit as I did not have any chocolate chips. Also used 2 c heavy cream and 2/3 c half and half per another review. Chilled the mixture overnight and froze it for about 8 hours after churning in the ice cream maker. Hubby and kids loved it.

Zucchini Brownies

Great flavor but definitely a very cakey brownie. Husband and kiddos loved them. Subbed brown sugar for the gran sugar but otherwise followed the recipe. Didn't make the frosting just sprinkled with powdered sugar.

Sweet Potato Enchiladas

Delicious!! Chewy middles and crunchy edges. Made it according to the recipe first time and found it too salty. Decreased salt to 1/4t, added a t of vanilla and made it with half shortening and half butter.

Beef Stew IV

Very good with the following changes. Dredged beef in flour seasoned with teaspoon of seasoning salt and 1/8 t pepper. Browned in EVOO. Deglazed the pan with water. Returned meat to pan and added 4 beef bouillon cubes, onion, garlic, bay, teaspoon of rosemary and 1/2 teaspoon of thyme. Left the paprika and worcestershire sauce out because I didn't have any. Cooked as directed. Also subbed green beans and peas for the corn. Delicious and easy!!

Quick Eggplant Parmesan

Great quick and easy recipe. My husband loved it and he is not big eggplant fan. I followed other reviewers suggestion and cut the eggplant into 1/2 inch slices. Also I used a medium-large eggplant so I quadrupled the sauce and used a healthy 1/2 t of red pepper. Placed the finished eggplant in a 250 degree oven for the cheese to melt while I finished making the pasta and side dishes
