Bessy's Zesty Grilled Garlic-Herb Chicken

Excellent! I used chicken legs.To make it more "light" (we are all on a diet) I substituted sugar substitute for the sugar and reduced the oil. Also, becuse I had it on hand, I added about 1/2 cup of hot chutney to the marianade. I removed all trace of marinade before cooking (baked in oven). Even hubby liked this and he hates chicken!

Vegan Curried Rice

Not bad but a little too spicy, even for me. Next time I'll go easier on the chili powder. Also, perhaps becase I used basmati rice, I needed twice the amount of water stipulated.

Herb Roasted Pork

The BEST pork I've ever cooked! My picky brother RAVED about this and hubby,who hates sugar in food devoured it! I doubled the recipe (the boys are big eaters) and thought I had to add a little butter afrter I took it out if the oven, it looked a little dry inside. I shouldn't have worried. It was tender and succulent... beautiful! I'll be making this frequently! BRAVO!

Grandma Bellows' Lemony Shrimp Macaroni Salad with Herbs

Absolutely the best pasta salad I ever made!! I used mayo light due to the calories and had more shrimp. I added the eggs chopped inside the mix because my family is not much for garnishes. The green onion, dill, parsley combo was outta this world! I had my doubts cause I usually make a heavier, more spicy pasta salad. Never again! This is our new favorite!

Hudson's Baked Tilapia with Dill Sauce

The 5 stars are for the sauce and the cajun mix idea for the fish. I had to make a few changes to cut calories, so I used 2% Fage Greek yogurt and mayo light. For the fish, I coated with flour, dipped in eggs and coated again with bread crumbs then baked. Hubby thought they were fried (as he had ordered)! The sauce was outta this world!

Boilermaker Tailgate Chili

I made this for my family and they went nuts over it! I will be making it regularly from now on. I omitted the sausage for dietetic considerations and used more ground beef instead. Also, I had no fresh celery so I used 2 tbsp of dried celery root instead. This is my first review and just HAD to post it, that's how good this came out!
