About this Cook
I am physically disabled so I need help to cook. I've also had WLS so I'm limited as what I can eat. Neither of these things stop me from being an ambitious cook, always in serch for new and better tastes both for myself and my family.
My favorite things to cook
Chili con carne. My family can't get enough of it! Tandori chcken, my personal favorite. Sweet and sour anything... family likes it, I love it!
My favorite family cooking traditions
Turkey stuffed with Southern bread stuffing for Christmas Lamb roasted on a spit or in the oven for Easter
My cooking triumphs
No "triumphs" really, just some very good meals appereciated by my family and my few friends.Perhaps my first triumph was sweet and sour chicken. I made it when I was young, my mom loved it and learned how to make it too.
My cooking tragedies
Too many to mention.

Bessy's Zesty Grilled Garlic-Herb Chicken
Excellent! I used chicken legs.To make it more "light" (we are all on a diet) I substituted sugar substitute for the sugar and reduced the oil. Also, becuse I had it on hand, I added about 1/2 cup of hot chutney to the marianade. I removed all trace of marinade before cooking (baked in oven). Even hubby liked this and he hates chicken!

Vegan Curried Rice
Not bad but a little too spicy, even for me. Next time I'll go easier on the chili powder. Also, perhaps becase I used basmati rice, I needed twice the amount of water stipulated.
